  1. 1. Rinse the salmon under running water and pat it dry with a kitchen towel.
  2. 2. Peel the ginger and chop it finely.
  3. 3. Mix the finely chopped ginger in a small bowl with the lime juice and two tablespoons of oil.
  4. 4. Pour the marinade evenly over the salmon.
  5. 5. Let the fish marinate for a few minutes.
  6. 6. Pour boiling water over the tomatoes to blanch them (cook briefly in boiling water).
  7. 7. Immediately shock the tomatoes with cold water to stop the cooking process.
  8. 8. Peel the loosened skin off the tomatoes.
  9. 9. Cut the peeled tomatoes into quarters and remove the core.
  10. 10. Dice the tomato flesh into small pieces.
  11. 11. Peel the garlic and chop it finely as well.
  12. 12. Heat the wok and add the remaining oil.
  13. 13. Sauté the garlic together with the rosemary in the hot oil for a short time.
  14. 14. Stir the diced tomatoes into the spices.
  15. 15. Deglaze the pan with the wine.
  16. 16. Season the tomato sauce with salt and pepper to taste.
  17. 17. Place the marinated salmon directly on top of the tomato sauce.
  18. 18. Cover the wok and cook the salmon for about six minutes.
  19. 19. Taste the dish one more time before serving.
  20. 20. Plate the salmon with the sauce.
