🍽️ Salmon with Tomatoes

Ingredients
- 4 salmon steaks (approx. 180 g each)
- 2 cm ginger
- 2 tbsp lime juice
- 4 tbsp olive oil
- 8 tomatoes
- 2 garlic cloves
- 2 sprigs rosemary
- 1 splash dry white wine
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the salmon under running water and pat it dry with a kitchen towel.
- 2. Peel the ginger and chop it finely.
- 3. Mix the finely chopped ginger in a small bowl with the lime juice and two tablespoons of oil.
- 4. Pour the marinade evenly over the salmon.
- 5. Let the fish marinate for a few minutes.
- 6. Pour boiling water over the tomatoes to blanch them (cook briefly in boiling water).
- 7. Immediately shock the tomatoes with cold water to stop the cooking process.
- 8. Peel the loosened skin off the tomatoes.
- 9. Cut the peeled tomatoes into quarters and remove the core.
- 10. Dice the tomato flesh into small pieces.
- 11. Peel the garlic and chop it finely as well.
- 12. Heat the wok and add the remaining oil.
- 13. Sauté the garlic together with the rosemary in the hot oil for a short time.
- 14. Stir the diced tomatoes into the spices.
- 15. Deglaze the pan with the wine.
- 16. Season the tomato sauce with salt and pepper to taste.
- 17. Place the marinated salmon directly on top of the tomato sauce.
- 18. Cover the wok and cook the salmon for about six minutes.
- 19. Taste the dish one more time before serving.
- 20. Plate the salmon with the sauce.
