🍽️ Steamed Salmon with Green Asparagus

Ingredients
- 4 salmon fillets (each 200 g)
- 1 large stalk leek
- 1 bunch asparagus
- 0.5 bunch dill
- salt
- pepper (from the mill)
- 2 limes (of which the juice)
- 2 limes
- sesame oil
- 5 tbsp fish stock
Instructions
- 1. Pat the salmon fillets dry with kitchen paper.
- 2. Season the fish with salt and pepper.
- 3. Drizzle the salmon with lime juice.
- 4. Cover the fillets with cling film.
- 5. Let the fish marinate for 30 minutes.
- 6. Clean the leeks and wash them thoroughly.
- 7. Cut the leek stalks once across the width.
- 8. Halve the leek pieces lengthwise.
- 9. Pour the fish stock into a pan with a heavy lid and a steamer insert.
- 10. Place the leek halves flat in the steamer insert.
- 11. Season the leeks with a little salt and pepper.
- 12. Place the marinated salmon fillets on top of the leeks.
- 13. Distribute 4 dill sprigs over the fish.
- 14. Drizzle the remaining marinade over the salmon.
- 15. Steam the fish covered for approx. 6 minutes over medium heat.
- 16. Wash the asparagus and cut off the woody ends.
- 17. Halve the asparagus lengthwise.
- 18. Blanch the asparagus for approx. 10 minutes in plenty of salted water.
- 19. Let the asparagus drain.
- 20. Plate the cooked fish fillets together with the leeks.
- 21. Distribute the asparagus over the fillets.
- 22. Garnish the dish with the steamed dill.
- 23. Drizzle each portion with 1-2 tablespoons of sesame oil.
- 24. Garnish with a lime wedge and serve the dish.
