  1. 1. Pat the salmon fillets dry with kitchen paper.
  2. 2. Season the fish with salt and pepper.
  3. 3. Drizzle the salmon with lime juice.
  4. 4. Cover the fillets with cling film.
  5. 5. Let the fish marinate for 30 minutes.
  6. 6. Clean the leeks and wash them thoroughly.
  7. 7. Cut the leek stalks once across the width.
  8. 8. Halve the leek pieces lengthwise.
  9. 9. Pour the fish stock into a pan with a heavy lid and a steamer insert.
  10. 10. Place the leek halves flat in the steamer insert.
  11. 11. Season the leeks with a little salt and pepper.
  12. 12. Place the marinated salmon fillets on top of the leeks.
  13. 13. Distribute 4 dill sprigs over the fish.
  14. 14. Drizzle the remaining marinade over the salmon.
  15. 15. Steam the fish covered for approx. 6 minutes over medium heat.
  16. 16. Wash the asparagus and cut off the woody ends.
  17. 17. Halve the asparagus lengthwise.
  18. 18. Blanch the asparagus for approx. 10 minutes in plenty of salted water.
  19. 19. Let the asparagus drain.
  20. 20. Plate the cooked fish fillets together with the leeks.
  21. 21. Distribute the asparagus over the fillets.
  22. 22. Garnish the dish with the steamed dill.
  23. 23. Drizzle each portion with 1-2 tablespoons of sesame oil.
  24. 24. Garnish with a lime wedge and serve the dish.
