🥗 Juicy Air Fryer Salmon with Fresh Vegetable Salad

Ingredients
- 300 g Salmon fillet (in 2 equal pieces)
- 0.5 bunch Parsley (10 g)
- 4 tbsp Olive oil
- 0.5 tsp Chili flakes
- Salt
- Pepper
- 1 Lemon
- 100 g Leaf lettuce (e.g. Lollo Rosso or mixed leaf lettuces)
- 1 Cucumber
- 4 Radishes
- 10 colorful Cherry tomatoes
- 2 tbsp Kalamata olive (pitted; 20 g each)
- 1 tsp Honey
- 1 tsp Mustard
Instructions
- 1. Pat the salmon fillets dry with kitchen paper.
- 2. Wash the parsley and shake it dry.
- 3. Finely chop the parsley.
- 4. Take half of the parsley and mix it in a small bowl with two tablespoons of olive oil, chili flakes, salt, and pepper.
- 5. Coat the salmon fillets thoroughly with this parsley marinade.
- 6. Wash the lemon under hot water.
- 7. Pat the lemon dry.
- 8. Slice the one half of the lemon into thin slices.
- 9. Squeeze the juice from the other half of the lemon.
- 10. Place a piece of baking paper in the basket of the air fryer.
- 11. Distribute the lemon slices on the baking paper.
- 12. Place the marinated salmon fillets on top of the lemon slices.
- 13. Preheat the air fryer to 180 degrees Celsius.
- 14. Cook the salmon at 180 degrees Celsius for about 10 minutes.
- 15. Check the salmon: it should look juicy and slightly translucent.
- 16. Wash the salad greens, cucumber, radishes, and tomatoes.
- 17. Remove any hard stems or inedible parts from the salad greens.
- 18. Tear the salad greens into bite-sized pieces.
- 19. Halve the cucumber and slice it into thin rounds.
- 20. Halve the radishes and slice them as well.
- 21. Halve the tomatoes.
- 22. Place the salad greens, cucumber slices, radish slices, and tomato halves into a large bowl.
- 23. Add the olives to the bowl with the vegetables.
- 24. Pour the freshly squeezed lemon juice into a small bowl.
- 25. Add the remaining olive oil to the lemon juice.
- 26. Add a spoonful of honey.
- 27. Add a spoonful of mustard.
- 28. Season the dressing with salt and pepper.
- 29. Whisk the dressing vigorously until well combined.
- 30. Pour the dressing over the vegetables in the bowl.
- 31. Toss the vegetables gently with the dressing.
- 32. Remove the cooked salmon from the air fryer.
- 33. Divide the salad among the plates.
- 34. Place the salmon fillets on top of the salad.
- 35. Serve the dish immediately.
