  1. 1. Rinse the quinoa in a sieve under cold running water until the water runs clear.
  2. 2. Peel the onion and cut it into small cubes.
  3. 3. Heat two tablespoons of oil in a pot and sauté the onion cubes until translucent.
  4. 4. Add the rinsed quinoa to the pot and deglaze it with a splash of vegetable broth.
  5. 5. Let the quinoa absorb the liquid and add more broth as needed.
  6. 6. Stir occasionally and repeat this process for about 20 minutes until the quinoa is creamy and cooked.
  7. 7. Rinse the salmon briefly and pat it dry with kitchen paper.
  8. 8. Season the salmon with salt.
  9. 9. Heat the remaining oil in a hot, non-stick pan.
  10. 10. Pan-fry the salmon on all sides for 4 to 5 minutes until lightly golden brown.
  11. 11. Wash the lemon in hot water and pat it dry.
  12. 12. Grate the lemon peel into fine zest strips.
  13. 13. Squeeze some juice from the lemon.
  14. 14. Stir the Parmesan (except for 4 tablespoons) into the cooked quinoa.
  15. 15. Season the quinoa with the lemon juice, salt, and pepper to taste.
  16. 16. Divide the quinoa among deep plates.
  17. 17. Place the pan-fried salmon on top of the quinoa.
  18. 18. Sprinkle the dish with the remaining Parmesan and the lemon zest.
  19. 19. Serve the dish immediately.
