🍽️ Creamy Quinoa with Pan-Seared Salmon

Ingredients
- 350 g Quinoa
- 1 Onion
- 3 tbsp Vegetable Oil
- 1 l Vegetable Broth
- 300 g Salmon Fillet
- Salt
- 1 Unpeeled Lemon
- 80 g Freshly Grated Parmesan
- White Pepper
Instructions
- 1. Rinse the quinoa in a sieve under cold running water until the water runs clear.
- 2. Peel the onion and cut it into small cubes.
- 3. Heat two tablespoons of oil in a pot and sauté the onion cubes until translucent.
- 4. Add the rinsed quinoa to the pot and deglaze it with a splash of vegetable broth.
- 5. Let the quinoa absorb the liquid and add more broth as needed.
- 6. Stir occasionally and repeat this process for about 20 minutes until the quinoa is creamy and cooked.
- 7. Rinse the salmon briefly and pat it dry with kitchen paper.
- 8. Season the salmon with salt.
- 9. Heat the remaining oil in a hot, non-stick pan.
- 10. Pan-fry the salmon on all sides for 4 to 5 minutes until lightly golden brown.
- 11. Wash the lemon in hot water and pat it dry.
- 12. Grate the lemon peel into fine zest strips.
- 13. Squeeze some juice from the lemon.
- 14. Stir the Parmesan (except for 4 tablespoons) into the cooked quinoa.
- 15. Season the quinoa with the lemon juice, salt, and pepper to taste.
- 16. Divide the quinoa among deep plates.
- 17. Place the pan-fried salmon on top of the quinoa.
- 18. Sprinkle the dish with the remaining Parmesan and the lemon zest.
- 19. Serve the dish immediately.
