🍽️ Oven Salmon with Bell Pepper Ring

Ingredients
- 600 g salmon fillet (4 salmon fillets)
- 4 tbsp lemon juice
- 3 bell peppers (red, yellow, green)
- 1 onion
- 1 clove garlic
- salt
- pepper
- 2 tbsp olive oil
- 100 ml vegetable broth
Instructions
- 1. Rinse the salmon fillets under cold running water.
- 2. Pat the fillets completely dry with a kitchen towel.
- 3. Drizzle the salmon with two tablespoons of lemon juice.
- 4. Let the marinated fillets rest for ten minutes.
- 5. Wash the bell peppers thoroughly under running water.
- 6. Remove the seeds and white pith from the bell peppers.
- 7. Cut the bell peppers into thin strips.
- 8. Peel the onion and remove the outer skin.
- 9. Halve the onion lengthwise.
- 10. Cut the onion halves into thin strips as well.
- 11. Cut the garlic clove in half lengthwise.
- 12. Rub a baking dish thoroughly with the cut side of the garlic.
- 13. Season the pepper and onion strips with salt and pepper.
- 14. Distribute the vegetables evenly in the prepared baking dish.
- 15. Drizzle the vegetables with one tablespoon of oil.
- 16. Season the salmon fillets to taste with salt and pepper.
- 17. Place the fillets directly on top of the vegetables in the dish.
- 18. Drizzle the remaining oil over the salmon.
- 19. Pour the broth into the baking dish.
- 20. Preheat the oven to 200 degrees Celsius conventional heat.
- 21. Place the dish in the oven and bake the salmon for 25 to 30 minutes.
