  1. 1. Whisk the miso paste with one tablespoon of soy sauce, the sugar, and two tablespoons of boiling water in a shallow dish.
  2. 2. Rinse the salmon fillets and pat them dry with a kitchen towel.
  3. 3. Turn the salmon fillets in the marinade, cover the dish, and let them marinate for about 15 minutes.
  4. 4. Bring plenty of salted water to a boil in a pot.
  5. 5. Cook the soba noodles in it for about 5 minutes or follow the package instructions.
  6. 6. Drain the noodles, rinse them with cold water, and let them drain well.
  7. 7. Trim and wash the snow peas.
  8. 8. Slice the snow peas lengthwise into thin strips.
  9. 9. Boil the snow peas and edamame in salted boiling water for 3 to 4 minutes.
  10. 10. Shock the vegetables with cold water and let them drain.
  11. 11. Wash the salad greens and spin them dry.
  12. 12. Mix the drained noodles in a bowl with the snow peas, edamame, and salad leaves.
  13. 13. Line a baking rack with baking paper.
  14. 14. Place the salmon fillets skin-side down on the rack.
  15. 15. Grill the salmon in the preheated oven for 3 to 4 minutes.
  16. 16. Turn the fillets and finish cooking them on the other side for another 3 to 4 minutes.

  18. 18. Whisk vinegar with mirin and the remaining soy sauce in a small bowl.
  19. 19. Stir the wasabi paste and oil into the liquid.
  20. 20. Finally, season the dressing to taste.

  22. 22. Arrange the noodle salad on both sides next to the fish.

  24. 24. Sprinkle everything with white and black sesame seeds.
