🍽️ Oven Salmon in Miso Marinade with Noodle Salad

Ingredients
- 2 tbsp miso paste (15 g each)
- 2 tbsp soy sauce
- 3 tsp raw cane sugar
- 4 salmon fillets (with skin; 125 g each)

- 250 g soba noodles
- 150 g snow peas
- 150 g frozen edamame
- 100 g mixed leaf salad
- 3 tsp rice vinegar
- 1 tbsp mirin
- 1 tsp wasabi paste
- 2 tbsp sesame oil
- 2 tbsp sesame seeds (15 g each; white and black)
Instructions
- 1. Whisk the miso paste with one tablespoon of soy sauce, the sugar, and two tablespoons of boiling water in a shallow dish.
- 2. Rinse the salmon fillets and pat them dry with a kitchen towel.
- 3. Turn the salmon fillets in the marinade, cover the dish, and let them marinate for about 15 minutes.
- 4. Bring plenty of salted water to a boil in a pot.
- 5. Cook the soba noodles in it for about 5 minutes or follow the package instructions.
- 6. Drain the noodles, rinse them with cold water, and let them drain well.
- 7. Trim and wash the snow peas.
- 8. Slice the snow peas lengthwise into thin strips.
- 9. Boil the snow peas and edamame in salted boiling water for 3 to 4 minutes.
- 10. Shock the vegetables with cold water and let them drain.
- 11. Wash the salad greens and spin them dry.
- 12. Mix the drained noodles in a bowl with the snow peas, edamame, and salad leaves.
- 13. Line a baking rack with baking paper.
- 14. Place the salmon fillets skin-side down on the rack.
- 15. Grill the salmon in the preheated oven for 3 to 4 minutes.
- 16. Turn the fillets and finish cooking them on the other side for another 3 to 4 minutes.
- 17. Remove the salmon from the oven and let it rest briefly.
- 18. Whisk vinegar with mirin and the remaining soy sauce in a small bowl.
- 19. Stir the wasabi paste and oil into the liquid.
- 20. Finally, season the dressing to taste.
- 21. Place the salmon fillets in the center of the plates.
- 22. Arrange the noodle salad on both sides next to the fish.
- 23. Drizzle the dish with the dressing.
- 24. Sprinkle everything with white and black sesame seeds.
- 25. Serve the salmon with miso immediately.
