🍽️ Oven salmon with creamy herb filling and leek

Ingredients
- 400 g floury potatoes
- 1 handful parsley
- 1 handful thyme
- 2 tbsp whipping cream
- 2 tbsp butter
- 2 egg yolks
- salt
- pepper (from the mill)
- 2 salmon fillets (approx. 1 kg each, kitchen-ready with skin)
- olive oil
- 2 stalks leek
- thyme (for garnish)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes for about 30 minutes until they are cooked through.
- 3. Peel the hot potatoes.
- 4. Press the potatoes through a potato ricer while they are still warm.
- 5. Rinse the herbs under running water.
- 6. Shake the herbs dry.
- 7. Pluck the leaves off the stems.
- 8. Puree the herbs together with the cream until smooth.
- 9. Mix the herb-cream mixture with the butter and the egg yolks.
- 10. Fold the butter-egg yolk mixture into the potatoes.
- 11. Season the potato mixture with salt and pepper to taste.
- 12. Preheat the oven to 180 degrees Celsius (top and bottom heat).
- 13. Grease a baking tray with some oil.
- 14. Wash the leek thoroughly.
- 15. Remove the green tops and the root ends from the leek.
- 16. Slice the leek into thin rings.
- 17. Distribute the leek rings evenly on the prepared baking tray.
- 18. Drizzle the leek with some oil.
- 19. Season the leek with salt and pepper.
- 20. Rinse the salmon under running water.
- 21. Pat the salmon dry with kitchen paper.
- 22. Place the salmon fillet skin-side down on the work surface.
- 23. Season this side of the salmon with salt and pepper.
- 24. Spread the herb-cream filling evenly over the salmon.
- 25. Season the other meat side of the salmon with salt and pepper as well.
- 26. Fold the salmon over the filling so that the filled side faces inward.
- 27. Tie the salmon securely with kitchen twine.
- 28. Place the tied salmon on the leek bed on the baking tray.
- 29. Drizzle the salmon with a little more oil.
- 30. Cook the salmon in the preheated oven for about 40 minutes.
- 31. Take the salmon out of the oven.
- 32. Place the salmon with the leek on a serving plate.
- 33. Remove the kitchen twine from the salmon.
- 34. Serve the dish immediately.
