  1. 1. Wash the potatoes thoroughly.
  2. 2. Steam the potatoes for about 30 minutes until they are cooked through.
  3. 3. Peel the hot potatoes.
  4. 4. Press the potatoes through a potato ricer while they are still warm.
  5. 5. Rinse the herbs under running water.
  6. 6. Shake the herbs dry.
  7. 7. Pluck the leaves off the stems.
  8. 8. Puree the herbs together with the cream until smooth.
  9. 9. Mix the herb-cream mixture with the butter and the egg yolks.
  10. 10. Fold the butter-egg yolk mixture into the potatoes.
  11. 11. Season the potato mixture with salt and pepper to taste.
  12. 12. Preheat the oven to 180 degrees Celsius (top and bottom heat).
  13. 13. Grease a baking tray with some oil.
  14. 14. Wash the leek thoroughly.
  15. 15. Remove the green tops and the root ends from the leek.
  16. 16. Slice the leek into thin rings.
  17. 17. Distribute the leek rings evenly on the prepared baking tray.
  18. 18. Drizzle the leek with some oil.
  19. 19. Season the leek with salt and pepper.
  20. 20. Rinse the salmon under running water.
  21. 21. Pat the salmon dry with kitchen paper.
  22. 22. Place the salmon fillet skin-side down on the work surface.
  23. 23. Season this side of the salmon with salt and pepper.
  24. 24. Spread the herb-cream filling evenly over the salmon.
  25. 25. Season the other meat side of the salmon with salt and pepper as well.
  26. 26. Fold the salmon over the filling so that the filled side faces inward.
  27. 27. Tie the salmon securely with kitchen twine.
  28. 28. Place the tied salmon on the leek bed on the baking tray.
  29. 29. Drizzle the salmon with a little more oil.
  30. 30. Cook the salmon in the preheated oven for about 40 minutes.
  31. 31. Take the salmon out of the oven.
  32. 32. Place the salmon with the leek on a serving plate.
  33. 33. Remove the kitchen twine from the salmon.
  34. 34. Serve the dish immediately.
