  1. 1. Peel the cucumber completely.
  2. 2. Cut the cucumber in half lengthwise.
  3. 3. Scoop out the inside of the cucumber halves with a teaspoon.
  4. 4. Dice the remaining cucumber flesh into very small cubes.
  5. 5. Place the cucumber cubes in a bowl.
  6. 6. Add lemon juice, olive oil, pressed garlic, chopped chives, salt, and cayenne pepper.
  7. 7. Mix all ingredients well together.
  8. 8. Let the salad stand for 10 to 15 minutes to let the flavors develop.
  9. 9. Cut the salmon fillet in half lengthwise.
  10. 10. Divide the fillet into long pieces.
  11. 11. Heat one tablespoon of clarified butter in a pan.
  12. 12. Fry the salmon pieces on both sides until golden brown.
  13. 13. Cook the fish for about 1 minute per side.
  14. 14. Season the cooked fish with salt and pepper.
  15. 15. Place the salmon on top of the cucumber salad.
  16. 16. Serve the dish immediately.
