🍽️ Crispy Salmon on Fresh Cucumber Dip

Ingredients
- 2 cucumbers (nice and cold from the fridge)
- juice of one lemon
- 1 clove of garlic
- 2 tbsp chive rings
- cayenne pepper
- 3 tbsp olive oil
- salt
- pepper (from the mill)
- 500 g salmon fillet (skinless)
- ghee
Instructions
- 1. Peel the cucumber completely.
- 2. Cut the cucumber in half lengthwise.
- 3. Scoop out the inside of the cucumber halves with a teaspoon.
- 4. Dice the remaining cucumber flesh into very small cubes.
- 5. Place the cucumber cubes in a bowl.
- 6. Add lemon juice, olive oil, pressed garlic, chopped chives, salt, and cayenne pepper.
- 7. Mix all ingredients well together.
- 8. Let the salad stand for 10 to 15 minutes to let the flavors develop.
- 9. Cut the salmon fillet in half lengthwise.
- 10. Divide the fillet into long pieces.
- 11. Heat one tablespoon of clarified butter in a pan.
- 12. Fry the salmon pieces on both sides until golden brown.
- 13. Cook the fish for about 1 minute per side.
- 14. Season the cooked fish with salt and pepper.
- 15. Place the salmon on top of the cucumber salad.
- 16. Serve the dish immediately.
