🍽️ Fresh Salmon Tartare with Cucumber Dressing

Ingredients
- 1 cucumber
- 4 olive oil
- 0.5 tsp mustard
- 2 tbsp white wine vinegar
- 6 tbsp orange juice
- salt (pepper)
- 500 g salmon fillet
- 2 tbsp lemon juice
- 1 bunch dill
- 1 bunch parsley
Instructions
- 1. Wash the cucumber thoroughly under running water.
- 2. Cut the cucumber in half lengthwise.
- 3. Scrape out the seeds from the cucumber halves using a spoon.
- 4. Dice the cucumber flesh into very small cubes.
- 5. Whisk the olive oil, mustard, vinegar, and orange juice together in a small bowl.
- 6. Season the marinade with salt and pepper to taste.
- 7. Add the cucumber cubes to the marinade and mix well.
- 8. Finely chop the salmon fillet.
- 9. Place the chopped salmon in a separate bowl.
- 10. Drizzle lemon juice over the salmon.
- 11. Season the salmon with salt and pepper.
- 12. Wash the dill and parsley sprigs thoroughly.
- 13. Arrange the herbs in a star shape in the center of the serving plates.
- 14. Place a dollop of salmon tartare in the center of the herb stars.
- 15. Drizzle the cucumber marinade over the salmon.
