  2. 2. Cut the cucumber in half lengthwise.
  3. 3. Scrape out the seeds from the cucumber halves using a spoon.
  4. 4. Dice the cucumber flesh into very small cubes.
  5. 5. Whisk the olive oil, mustard, vinegar, and orange juice together in a small bowl.
  6. 6. Season the marinade with salt and pepper to taste.
  7. 7. Add the cucumber cubes to the marinade and mix well.
  8. 8. Finely chop the salmon fillet.
  9. 9. Place the chopped salmon in a separate bowl.
  10. 10. Drizzle lemon juice over the salmon.
  11. 11. Season the salmon with salt and pepper.
  12. 12. Wash the dill and parsley sprigs thoroughly.
  13. 13. Arrange the herbs in a star shape in the center of the serving plates.
  14. 14. Place a dollop of salmon tartare in the center of the herb stars.
  15. 15. Drizzle the cucumber marinade over the salmon.
