🍽️ Salmon with Strawberry-Cucumber Salsa

Ingredients
- 600 g salmon fillet (kitchen-ready, with skin)
- 2 tbsp olive oil
- 2 tbsp white balsamic vinegar
- 1 tbsp liquid honey
- salt
- pepper (from the mill)
- 1 tbsp olive oil
- 1 tbsp butter
- 200 g strawberries
- 0.5 cucumber
- 1 avocado
- 1 lime (juice)
- 2 sprigs cilantro
- 1 tbsp olive oil

Instructions
- 1. Rinse the salmon under running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Cut the salmon into four equal pieces.
- 4. Mix the oil, vinegar, and honey in a small bowl.
- 5. Season the marinade with salt and pepper.
- 6. Coat the salmon pieces with the marinade.
- 7. Cover the bowl.
- 8. Place the bowl in the refrigerator for about one hour.
- 9. Wash the strawberries.
- 10. Remove the green stems from the strawberries.
- 11. Dice the strawberries into small cubes.
- 12. Wash the cucumber.
- 13. Cut the cucumber in half lengthwise.
- 14. Scoop out the seeds from the cucumber halves with a spoon.
- 15. Dice the cucumber flesh.
- 16. Cut the avocado into quarters.
- 17. Remove the pit of the avocado.
- 18. Peel the avocado.
- 19. Dice the avocado flesh.
- 20. Place the strawberry cubes, cucumber cubes, and avocado pieces in a bowl.
- 21. Drizzle the vegetables with lime juice.
- 22. Toss the ingredients gently.
- 23. Rinse the cilantro.
- 24. Shake the cilantro dry.
- 25. Pick the cilantro leaves off the stems.
- 26. Stir the cilantro leaves and a little oil into the salsa.
- 27. Season the salsa to taste with salt and pepper.
- 28. Heat the oil and butter in a large skillet.
- 29. Set the heat to medium-high.
- 30. Remove the salmon pieces from the marinade.
- 31. Place the salmon skin-side down in the hot pan.
- 32. Sear the salmon for about two minutes.
- 33. Flip the salmon once.
- 34. Remove the pan from the heat.
- 35. Let the fish cook through for another two to three minutes.
- 36. Divide the salmon among the plates.
- 37. Serve the salmon with the fresh salsa.
