🍽️ Crispy Salmon with Fresh Strawberry Basil Topping

Ingredients
- 1 red onion
- 1 green chili
- 0.5 bunch basil (10 g)
- 300 g strawberries
- salt
- pepper
- 4 tbsp lime juice
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 bulb fennel
- 0.5 cucumber
- 50 g arugula
- 600 g salmon fillet (with skin)
- 2 tbsp soy sauce
- 1 tbsp honey
- 100 g sesame seeds
- 4 tbsp sesame oil
Instructions
- 1. Peel the onion and cut it into very small cubes.
- 2. Halve the chili pepper lengthwise, remove the seeds, and wash it.
- 3. Finely chop the chili pepper.
- 4. Wash the basil and shake it dry.
- 5. Pluck the leaves from the stems.
- 6. Set aside a handful of leaves for decoration.
- 7. Finely chop the remaining basil.
- 8. Remove the stems from the strawberries and wash them.
- 9. Cut the strawberries into fine cubes.
- 10. Place the onions, chili, chopped basil, and strawberries into a small bowl.
- 11. Season the mixture with salt and pepper.
- 12. Add two tablespoons of lime juice, vinegar, and olive oil.
- 13. Mix everything well and set the salsa aside.
- 14. Clean the fennel and wash it.
- 15. Cut out the hard core at the bottom of the fennel.
- 16. Slice the fennel into very thin slices.
- 17. Clean the cucumber and wash it.
- 18. Slice the cucumber diagonally into thin rounds.
- 19. Wash the arugula and shake it dry.
- 20. Rinse the salmon fillet under cold water.
- 21. Pat the fish dry with a kitchen towel.
- 22. Cut the fillet into eight equal pieces.
- 23. Season the salmon pieces with salt and pepper.
- 24. Mix the remaining lime juice with soy sauce and honey.
- 25. Place 80 grams of sesame seeds on a flat plate.
- 26. Dip each salmon strip into the marinade first.
- 27. Then roll the fish in the sesame seeds.
- 28. Press the sesame seeds slightly so they stick.
- 29. Heat sesame oil in a frying pan.
- 30. Fry the fish on the flesh side for about two minutes over medium heat.
- 31. Carefully turn the fish over to the other side.
- 32. Cook the fish for another four minutes.
- 33. Distribute the fennel, cucumber, and arugula onto the plates.
- 34. Place the salmon steaks on top of the vegetables.
- 35. Top with the strawberry basil salsa.
- 36. Sprinkle the dish with the reserved basil leaves and the remaining sesame seeds.
- 37. Serve the salmon immediately.
