  2. 2. Halve the chili pepper lengthwise, remove the seeds, and wash it.
  3. 3. Finely chop the chili pepper.
  4. 4. Wash the basil and shake it dry.
  5. 5. Pluck the leaves from the stems.
  6. 6. Set aside a handful of leaves for decoration.
  7. 7. Finely chop the remaining basil.
  8. 8. Remove the stems from the strawberries and wash them.
  9. 9. Cut the strawberries into fine cubes.
  10. 10. Place the onions, chili, chopped basil, and strawberries into a small bowl.
  11. 11. Season the mixture with salt and pepper.
  12. 12. Add two tablespoons of lime juice, vinegar, and olive oil.
  13. 13. Mix everything well and set the salsa aside.
  14. 14. Clean the fennel and wash it.
  15. 15. Cut out the hard core at the bottom of the fennel.
  16. 16. Slice the fennel into very thin slices.
  17. 17. Clean the cucumber and wash it.
  18. 18. Slice the cucumber diagonally into thin rounds.
  19. 19. Wash the arugula and shake it dry.
  20. 20. Rinse the salmon fillet under cold water.
  21. 21. Pat the fish dry with a kitchen towel.
  22. 22. Cut the fillet into eight equal pieces.
  23. 23. Season the salmon pieces with salt and pepper.
  24. 24. Mix the remaining lime juice with soy sauce and honey.
  25. 25. Place 80 grams of sesame seeds on a flat plate.
  26. 26. Dip each salmon strip into the marinade first.
  27. 27. Then roll the fish in the sesame seeds.
  28. 28. Press the sesame seeds slightly so they stick.
  29. 29. Heat sesame oil in a frying pan.
  30. 30. Fry the fish on the flesh side for about two minutes over medium heat.
  31. 31. Carefully turn the fish over to the other side.
  32. 32. Cook the fish for another four minutes.
  33. 33. Distribute the fennel, cucumber, and arugula onto the plates.
  34. 34. Place the salmon steaks on top of the vegetables.
  35. 35. Top with the strawberry basil salsa.
  36. 36. Sprinkle the dish with the reserved basil leaves and the remaining sesame seeds.
  37. 37. Serve the salmon immediately.
