🍽️ Mediterranean Salmon with Oven Tomatoes

Ingredients
- 800 g Salmon fillet (4 Salmon fillets)
- 2 small Zucchini
- 2 Carrots
- 1 small Leek stalk
- 1 tsp Mustard seeds
- 3 tbsp Aceto balsamico
- 3 tbsp Olive oil
- Salt
- Pepper
- Clarified butter
- 300 g small Bush tomatoes
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Wash the vegetables thoroughly and remove any tough parts.
- 3. Cut the vegetables into thin, long strips.
- 4. Put the vegetable strips into boiling salted water for a short time.
- 5. Shock the vegetables immediately with cold water to stop the cooking process.
- 6. Place the tomatoes on pieces of greased aluminum foil.
- 7. Wrap the tomatoes tightly in the foil.
- 8. Place the foil packets in the oven and bake them for 20 minutes.
- 9. Lightly salt the salmon fillets.
- 10. Heat ghee (clarified butter) in a grill pan.
- 11. Fry the salmon fillets for 3 to 4 minutes on each side until golden brown.
- 12. Mix the vegetable strips with olive oil, balsamic vinegar, mustard seeds, salt, and pepper.
- 13. Season the vegetables to taste.
- 14. Plate the salmon.
- 15. Serve the oven tomatoes and the seasoned vegetables as a side dish.
