🍝 Creamy Salmon Curry with Noodles

Ingredients
- 250 g fine egg noodles
- salt
- 600 g salmon fillet
- 1 onion
- 3 garlic cloves
- 2 tbsp sesame oil
- 200 ml coconut milk
- 1 pinch chili powder
- 1 tsp curry powder
- 1 tsp sugar
- 2 tbsp lime juice
- 1 tsp grated lime zest
- 100 ml dry white wine
- lime leaf
- 2 tsp cornstarch
- lemon balm leaf
- 1 tbsp chive rings
- 1 small red chili pepper
- lemon balm for garnish
Instructions
- 1. Boil water in a pot and add salt.
- 2. Cook the noodles in it until they are al dente.
- 3. Pour the noodles into a colander and let them drain.
- 4. Rinse the salmon fillets under running water.
- 5. Pat the fish dry with a kitchen towel.
- 6. Cut the salmon into bite-sized pieces.
- 7. Season the fish pieces with salt and pepper.
- 8. Peel the onion and the garlic.
- 9. Cut the onion and garlic into very fine cubes.
- 10. Wash the chili pepper.
- 11. Cut the pod in half lengthwise.
- 12. Remove the seeds from the chili halves.
- 13. Cut one half of the chili into fine cubes.
- 14. Cut the other half of the chili into fine strips.
- 15. Heat one tablespoon of sesame oil in a wok or a pan.
- 16. Fry the fish on all sides over high heat.
- 17. Let the fish fry for about two minutes.
- 18. Take the fish out of the pan and set it aside.
- 19. Keep the fish warm with a lid.
- 20. Heat the remaining sesame oil in the same pan.
- 21. Add the onion cubes, chili cubes, and garlic to the pan.
- 22. Sauté the vegetables briefly.
- 23. Stir in chili powder, curry powder, and sugar.
- 24. Add the coconut milk, lime juice, and lime zest.
- 25. Add the lime leaves and wine to the pan.
- 26. Let the sauce simmer for about one minute.
- 27. Mix the cornstarch with a little water until smooth.
- 28. Stir the starch mixture into the sauce.
- 29. Bring the sauce to a boil.
- 30. Let the sauce thicken.
- 31. Add the noodles to the finished sauce.
- 32. Heat the noodles in the sauce.
- 33. Add the chives.
- 34. Roughly shred the fish with your hands.
- 35. Place the fish over the noodles.
- 36. Garnish the dish with the chili strips.
- 37. Sprinkle lemon balm leaves over it.
