  4. 4. Rinse the salmon fillets under running water.
  5. 5. Pat the fish dry with a kitchen towel.
  6. 6. Cut the salmon into bite-sized pieces.
  7. 7. Season the fish pieces with salt and pepper.
  8. 8. Peel the onion and the garlic.
  9. 9. Cut the onion and garlic into very fine cubes.
  10. 10. Wash the chili pepper.
  11. 11. Cut the pod in half lengthwise.
  12. 12. Remove the seeds from the chili halves.
  13. 13. Cut one half of the chili into fine cubes.
  14. 14. Cut the other half of the chili into fine strips.
  15. 15. Heat one tablespoon of sesame oil in a wok or a pan.
  16. 16. Fry the fish on all sides over high heat.

  34. 34. Roughly shred the fish with your hands.

  37. 37. Sprinkle lemon balm leaves over it.
