🍽️ Scandinavian Salmon and Potato Gratin

Ingredients
- 800 g firm-cooking potatoes
- salt
- 30 g butter
- 1 onion
- 3 sprigs dill
- 250 g smoked salmon
- 250 ml milk (1.5% fat)
- 150 ml whipping cream
- 4 eggs
- pepper (from the mill)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Cook the potatoes in salted water for about 30 minutes until tender.
- 3. Drain the water.
- 4. Peel the warm potatoes.
- 5. Let the potatoes cool down completely.
- 6. Slice the cooled potatoes into thin rounds.
- 7. Take a baking dish or a springform pan.
- 8. Grease the dish with 2 teaspoons of butter.
- 9. Peel the onion.
- 10. Dice the onion finely.
- 11. Wash the dill.
- 12. Shake the dill dry.
- 13. Strip the dill leaves from the stems.
- 14. Chop the dill coarsely.
- 15. Place a first layer of potato slices into the prepared dish.
- 16. Place a few slices of salmon on top of the potatoes.
- 17. Sprinkle some dill over the salmon.
- 18. Sprinkle some onion over the salmon.
- 19. Cover the filling with more potato slices.
- 20. Repeat the layering until all ingredients are used up.
- 21. Finish the dish with a top layer of potatoes.
- 22. Whisk the milk with the cream.
- 23. Add the eggs and whisk everything well.
- 24. Season the liquid with a pinch of salt.
- 25. Season the liquid with a pinch of pepper.
- 26. Pour the milk-egg mixture evenly over the layered potatoes.
- 27. Sprinkle butter flakes evenly over the surface.
- 28. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 29. Bake the gratin for about 45 minutes in the preheated oven.
- 30. Remove the gratin when it is golden brown.
