  1. 1. Rinse the salmon under cold water and pat it dry with a paper towel. Remove any remaining bones with tweezers. Wash the spring onions and slice them into thin rings. Wash the lime. Cut half of it into slices. Squeeze the juice from the other half. Peel the garlic and chop it roughly.
  2. 2. Cut a large piece of aluminum foil. It should be twice as long and three times as wide as the fish. Lay the foil flat. Brush the center with a little oil. Place the salmon skin-side down on top. Season the fish with salt and pepper. Drizzle olive oil and lime juice over it. Place the lime slices and garlic on the fish. Sprinkle half of the spring onions over it. Fold up the short ends of the foil. Pour the wine into the center. Fold the foil over the fish. Seal the packet well.
  3. 3. Place the foil packet on the hot grill. Grill the fish over medium heat for about 30 minutes. Open the foil briefly in between to check if the fish is cooked. Open the packet carefully before serving. Sprinkle the remaining spring onions over it.
