🍽️ Salmon Pasta Rolls with Creamy Spinach

Ingredients
- 8 sheets lasagna sheets
- salt
- 40 g pine nuts
- 2 handfuls parsley
- 1 handful thyme
- 3 tbsp olive oil
- 4 tbsp grated parmesan
- pepper (from the mill)
- 500 g salmon fillet
- 1 tbsp melted butter
- 4 fresh garlic cloves
- 250 g spinach
- 1 tbsp butter
- 80 ml whipping cream
- 1 dash lemon juice
Instructions
- 1. Cook the pasta in salted water until al dente.
- 2. Rinse the pasta with cold water and pat them dry.
- 3. Toast the pine nuts in a hot pan until golden brown.
- 4. Let the pine nuts cool down.
- 5. Rinse the parsley and thyme and shake them dry.
- 6. Strip the leaves from the herb stems.
- 7. Place the herbs, pine nuts, and oil into a blending cup.
- 8. Blend the mixture until smooth.
- 9. Stir 2 tablespoons of Parmesan into the paste.
- 10. Season the paste with salt and pepper.
- 11. Preheat the oven to 180 degrees Celsius (top and bottom heat).
- 12. Place two pasta sheets slightly overlapping each other.
- 13. Spread the herb paste over the pasta sheets.
- 14. Leave a narrow border around the edges.
- 15. Rinse the salmon and pat it dry.
- 16. Cut the salmon into 4 equal steaks.
- 17. Place one salmon steak in the center of the pasta.
- 18. Wrap the pasta around the salmon.
- 19. Place the rolls seam-side down on a baking sheet lined with baking paper.
- 20. Brush the rolls with melted butter.
- 21. Sprinkle the remaining Parmesan over the rolls.
- 22. Bake the rolls in the oven for approx. 15 minutes until lightly golden brown.
- 23. Peel the garlic and slice it thinly.
- 24. Rinse the spinach and remove coarse stems.
- 25. Chop the spinach roughly.
- 26. Sauté the garlic in butter in a hot pan for a short time.
- 27. Add the spinach to the pan and let it wilt.
- 28. Add the cream and let the sauce simmer briefly.
- 29. Season the spinach with lemon juice, salt, and pepper.
- 30. Remove the salmon from the oven and let it rest briefly.
- 31. Cut the salmon into pieces.
- 32. Serve the salmon on top of the spinach.
