🥗 Grilled Salmon Skewers with Crunchy Cucumber and Melon Salad

Ingredients
- 500 g Salmon fillet (skinless)
- 400 g Cherry tomatoes
- 3 Cloves of garlic
- 1 Bunch Basil (20 g)
- 0.5 Organic lemon (zest and juice)
- 8 tbsp Olive oil
- Salt
- Pepper
- 2 Salad cucumbers
- 1 Onion
- 0.5 Honeydew melon
- 80 g Grana Padano
- 2 tbsp White balsamic vinegar
- 1 tsp Maple syrup
Instructions
- 1. Rinse the salmon under cold water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Cut the salmon into small, bite-sized cubes.
- 4. Wash the tomatoes thoroughly.
- 5. Remove the green stem area from the tomatoes.
- 6. Thread the salmon cubes and tomatoes alternately onto the skewers.
- 7. Peel the garlic clove.
- 8. Chop the garlic very finely.
- 9. Wash the basil.
- 10. Shake the basil dry.
- 11. Pluck the basil leaves from the stems.
- 12. Chop half of the basil leaves finely.
- 13. Put the chopped basil and garlic into a bowl.
- 14. Add the lemon zest.
- 15. Add the lemon juice.
- 16. Add 4 tablespoons of oil.
- 17. Season the marinade with salt.
- 18. Season the marinade with pepper.
- 19. Brush the salmon and tomato skewers all over with the marinade.
- 20. Cover the skewers.
- 21. Place the skewers in the refrigerator for a while.
- 22. Prepare the cucumbers.
- 23. Wash the cucumbers.
- 24. Slice the cucumbers into thin slices.
- 25. Peel the onion.
- 26. Chop the onion finely.
- 27. Prepare the melon.
- 28. Remove the core of the melon.
- 29. Peel the melon.
- 30. Cut the melon into cubes.
- 31. Grate the Grana Padano cheese into fine flakes.
- 32. Whisk the vinegar with the maple syrup.
- 33. Whisk the remaining oil into the sauce.
- 34. Season the sauce with salt.
- 35. Season the sauce with pepper.
- 36. Toss the cucumber pieces with the sauce.
- 37. Toss the melon pieces with the sauce.
- 38. Fold the Grana Padano flakes into the salad.
- 39. Fold the remaining fresh basil leaves into the salad.
- 40. Preheat the grill or grill pan.
- 41. Place the salmon and tomato skewers on the hot grill.
- 42. Turn the skewers regularly.
- 43. Grill the skewers for about 8 minutes.
- 44. Plate the skewers on four plates.
- 45. Serve the skewers together with the cucumber salad.
