🍽️ Asian Salmon with Rice and Pak Choi

Ingredients
- 2 salmon steaks (150 g each)
- 1 tbsp ghee (clarified butter)
- 2 pieces pak choi
- 300 g basmati rice
- 4 tbsp finely chopped cilantro leaves
- 2 tbsp sesame oil
- 1 lime (1 tbsp grated zest)
- 2 limes (juice)
- salt
- pepper (from the mill)
Instructions
- 1. Cook the rice according to the package instructions and keep it warm.
- 2. Cut the pak choi in half lengthwise and, depending on the size of the leaves and stems, cut them into smaller pieces.
- 3. Bring plenty of salted water to a boil in a pot.
- 4. Add the pak choi and blanch (cook briefly in boiling water) for 3 minutes.
- 5. Immediately shock the vegetables in ice water.
- 6. Pat them dry, and drizzle with a little sesame oil.
- 7. Mix the coriander thoroughly with oil, salt, pepper, lime zest, and lime juice.
- 8. Heat ghee in a pan and sear the salmon over high heat on both sides.
- 9. Reduce the heat and generously spread the coriander mixture on the top side of the salmon.
- 10. Cover the pan and let the salmon cook over low heat for 10 minutes.
- 11. Serve the salmon with the pak choi and rice in small bowls immediately.
