  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into cubes of about 2 cm.
  3. 3. Place the potato cubes and bay leaves in a pot.
  4. 4. Cover the potatoes just with salted water.
  5. 5. Bring the water to a boil.
  6. 6. Reduce the heat to medium and cook the potatoes covered for about 15 minutes.
  7. 7. Peel the onions and dice them finely.
  8. 8. Heat 1 tbsp of oil in a pot.
  9. 9. Sauté the onions covered on low heat for 10 to 15 minutes.
  10. 10. Add the corned beef to the pan.
  11. 11. Break up the meat into small pieces with a fork.
  12. 12. Heat the meat with the onions.
  13. 13. Bring the vegetable broth to a boil in a pot.
  14. 14. Drain the potatoes.
  15. 15. Remove the bay leaves from the potatoes.
  16. 16. Mash the potato cubes with a potato masher.
  17. 17. Stir the hot broth into the mashed potatoes.
  18. 18. Stir the onion-meat mixture into the mashed potatoes.
  19. 19. Season the mash with salt, pepper, and clove.
  20. 20. Keep the mash covered and warm.
  21. 21. Heat the remaining oil in a non-stick pan.
  22. 22. Crack the eggs into the hot pan.
  23. 23. Fry the eggs on medium heat for 3 to 5 minutes to make sunny-side-up eggs.
  24. 24. Salt the sunny-side-up eggs.
  25. 25. Drain the beetroot and the pickles.
  26. 26. Pat the matjes or herring fillets dry.
  27. 27. Plate the potato-meat mash.
  28. 28. Top the mash with a sunny-side-up egg, herring, beetroot, and pickles.
  29. 29. Serve the Labskaus immediately.
