🍽️ Labskaus – Smarter

Ingredients
- 1 kg floury potatoes
- 2 bay leaves
- salt
- 150 g onions (3 onions)
- 2 tbsp rapeseed oil
- 340 g corned beef (can)
- 200 ml classic vegetable broth
- pepper
- ground cloves
- 4 eggs
- 220 g pickled beetroot (jar)
- 120 g gherkins (4 gherkins)
- 280 g matjes fillets (4 pieces or 4 Bismarck herring fillets)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into cubes of about 2 cm.
- 3. Place the potato cubes and bay leaves in a pot.
- 4. Cover the potatoes just with salted water.
- 5. Bring the water to a boil.
- 6. Reduce the heat to medium and cook the potatoes covered for about 15 minutes.
- 7. Peel the onions and dice them finely.
- 8. Heat 1 tbsp of oil in a pot.
- 9. Sauté the onions covered on low heat for 10 to 15 minutes.
- 10. Add the corned beef to the pan.
- 11. Break up the meat into small pieces with a fork.
- 12. Heat the meat with the onions.
- 13. Bring the vegetable broth to a boil in a pot.
- 14. Drain the potatoes.
- 15. Remove the bay leaves from the potatoes.
- 16. Mash the potato cubes with a potato masher.
- 17. Stir the hot broth into the mashed potatoes.
- 18. Stir the onion-meat mixture into the mashed potatoes.
- 19. Season the mash with salt, pepper, and clove.
- 20. Keep the mash covered and warm.
- 21. Heat the remaining oil in a non-stick pan.
- 22. Crack the eggs into the pan.
- 23. Fry the eggs on medium heat for 3 to 5 minutes to make sunny-side-up eggs.
- 24. Salt the sunny-side-up eggs.
- 25. Drain the beetroot and gherkins.
- 26. Pat the matjes or herring fillets dry.
- 27. Plate the potato-meat mash.
- 28. Top with a sunny-side-up egg, herring, beetroot, and gherkins.
- 29. Serve the Labskaus immediately.
