  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into cubes of about 2 cm.
  3. 3. Place the potato cubes and bay leaves in a pot.
  4. 4. Cover the potatoes just with salted water.
  5. 5. Bring the water to a boil.
  6. 6. Cook the potatoes covered at medium heat for about 15 minutes.
  7. 7. Peel the onions and dice them finely.
  8. 8. Heat 1 tbsp of oil in a pot.
  9. 9. Sauté the onions covered at low heat for 10 to 15 minutes.
  10. 10. Add the corned beef to the onions.
  11. 11. Break up the meat into small pieces with a fork.
  12. 12. Heat the meat and onion mixture.
  13. 13. Bring the vegetable broth to a boil in a pot.
  14. 14. Drain the potatoes.
  15. 15. Remove the bay leaves.
  16. 16. Mash the potato cubes with a potato masher.
  17. 17. Stir the hot broth into the mashed potatoes.
  18. 18. Stir the onion-meat mixture into the mashed potatoes.
  19. 19. Season the mixture with salt, pepper, and clove.
  20. 20. Keep the mixture warm covered.
  21. 21. Heat the remaining oil in a non-stick pan.
  22. 22. Crack the eggs.
  23. 23. Fry the eggs at medium heat for 3 to 5 minutes to make sunny-side-up eggs.
  24. 24. Salt the sunny-side-up eggs.
  25. 25. Drain the beetroot and gherkins.
  26. 26. Pat the matjes or herring fillets dry.
  27. 27. Plate the potato-meat mash.
  28. 28. Add a sunny-side-up egg, herring, beetroot, and gherkins.
  29. 29. Serve the Labskaus immediately.
