  1. 1. Thoroughly wash the Brussels sprouts under running water.
  2. 2. Remove any wilted outer leaves and the tough base of the stem.
  3. 3. Cut a small cross into the bottom end of each sprout.
  4. 4. Bring a pot of water and salt to a boil.
  5. 5. Add the Brussels sprouts to the boiling water.
  6. 6. Cook them for 10 to 15 minutes until they are tender-crisp.
  7. 7. Drain the Brussels sprouts in a colander.
  8. 8. Rinse them immediately with cold water to stop the cooking process.
  9. 9. Let the water drain off well.
  10. 10. Cut each Brussels sprout in half lengthwise.
  11. 11. Peel the onions and remove the outer skin.
  12. 12. Cut the onions into thin, narrow strips.
  13. 13. Break the bacon into coarse, irregular pieces.
  14. 14. Heat some oil in a large frying pan over medium-high heat.
  15. 15. Fry the Brussels sprouts in batches until well-browned.
  16. 16. Shake the pan occasionally to ensure even browning.
  17. 17. Add the bacon and onion strips to the pan.
  18. 18. Add fresh thyme sprigs.
  19. 19. Toss everything well to mix the ingredients.
  20. 20. Continue frying until the bacon is crispy and the onions are soft.
  21. 21. Season the dish with salt, pepper, and a pinch of ground nutmeg.
  22. 22. Warm the serving plates beforehand in the oven or with hot water.
  23. 23. Plate the Brussels sprouts on the warmed plates.
  24. 24. Serve the dish hot alongside fresh white bread.
