🍽️ Quick-fried Brussels sprouts with bacon and onions

Ingredients
- 600 g fresh Brussels sprouts
- salt
- 2 red onions
- 150 g breakfast bacon (sliced)
- 2 tbsp olive oil
- 4 sprigs thyme
- pepper (from the mill)
- nutmeg (freshly grated)
Instructions
- 1. Thoroughly wash the Brussels sprouts under running water.
- 2. Remove any wilted outer leaves and the tough base of the stem.
- 3. Cut a small cross into the bottom end of each sprout.
- 4. Bring a pot of water and salt to a boil.
- 5. Add the Brussels sprouts to the boiling water.
- 6. Cook them for 10 to 15 minutes until they are tender-crisp.
- 7. Drain the Brussels sprouts in a colander.
- 8. Rinse them immediately with cold water to stop the cooking process.
- 9. Let the water drain off well.
- 10. Cut each Brussels sprout in half lengthwise.
- 11. Peel the onions and remove the outer skin.
- 12. Cut the onions into thin, narrow strips.
- 13. Break the bacon into coarse, irregular pieces.
- 14. Heat some oil in a large frying pan over medium-high heat.
- 15. Fry the Brussels sprouts in batches until well-browned.
- 16. Shake the pan occasionally to ensure even browning.
- 17. Add the bacon and onion strips to the pan.
- 18. Add fresh thyme sprigs.
- 19. Toss everything well to mix the ingredients.
- 20. Continue frying until the bacon is crispy and the onions are soft.
- 21. Season the dish with salt, pepper, and a pinch of ground nutmeg.
- 22. Warm the serving plates beforehand in the oven or with hot water.
- 23. Plate the Brussels sprouts on the warmed plates.
- 24. Serve the dish hot alongside fresh white bread.
