🍽️ Moist Pumpkin Apple Muffins

Ingredients
- 150 g pumpkin flesh (butternut)
- 1 tart apple
- 1 tbsp lemon juice
- 150 g flour
- 75 g ground walnuts
- 1 tsp baking powder
- 1 pinch cinnamon powder
- 1 egg
- 125 g sugar
- 80 ml vegetable oil
- 1 tbsp vanilla sugar
- 175 ml buttermilk
- 50 g chopped walnuts
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Line the muffin tray cups with paper liners.
- 3. Grate the pumpkin flesh finely.
- 4. Peel the apple and remove the core.
- 5. Quarter the apple and grate it finely as well.
- 6. Add the lemon juice to the grated apple and stir to combine.
- 7. Mix the apple into the pumpkin in a large bowl.
- 8. Add the flour, ground nuts, baking powder, and cinnamon to a separate bowl.
- 9. Combine the dry ingredients with the pumpkin and apple mixture.
- 10. Whisk the egg in another bowl.
- 11. Add the sugar, oil, vanilla sugar, and buttermilk to the egg.
- 12. Stir the wet ingredients thoroughly.
- 13. Add the flour mixture to the wet mixture.
- 14. Stir the batter quickly and gently until just combined.
- 15. Divide the batter evenly into the cups.
- 16. Sprinkle the chopped walnuts over the muffins.
- 17. Bake the muffins for about 25 minutes until golden brown.
- 18. Remove the tray from the oven.
- 19. Let the muffins cool for a short while.
- 20. Remove the muffins from the tray.
- 21. Let them cool completely.
