  1. 1. Coarsely grate the pumpkin flesh. Mix it in a pot with 900 grams of jam setting sugar. Slit the vanilla pod lengthwise, cut it into pieces about 2 centimeters long, and stir it into the pumpkin. Let the mixture infuse overnight.
  2. 2. Thinly peel the lime and orange, then cut the peel into very fine strips. Juice the lemon and orange. Bring the juice with the remaining jam setting sugar to a boil. Add the citrus peel and simmer gently for 5 minutes.
  3. 3. Add the citrus peels along with the cooking liquid to the pumpkin and boil the mixture vigorously for 4 minutes, stirring occasionally. Stir in citric acid. Fill the jam immediately into clean jars and seal them well.
