🍳 Pumpkin Jam with Citrus Flavors

Ingredients
- 1 kg pumpkin flesh (pumpkin gross approx. 1.5 kg)
- 1 kg jam sugar
- 1 vanilla pod
- 1 lemon (organic)
- 1 orange (organic)
- 1 packet citric acid
Instructions
- 1. Coarsely grate the pumpkin flesh. Mix it in a pot with 900 grams of jam setting sugar. Slit the vanilla pod lengthwise, cut it into pieces about 2 centimeters long, and stir it into the pumpkin. Let the mixture infuse overnight.
- 2. Thinly peel the lime and orange, then cut the peel into very fine strips. Juice the lemon and orange. Bring the juice with the remaining jam setting sugar to a boil. Add the citrus peel and simmer gently for 5 minutes.
- 3. Add the citrus peels along with the cooking liquid to the pumpkin and boil the mixture vigorously for 4 minutes, stirring occasionally. Stir in citric acid. Fill the jam immediately into clean jars and seal them well.
