Ingredients
- 1 kg peeled pumpkin
- 100 ml wine vinegar
- 350 g sugar
- salt
- 3 cinnamon sticks
- 1 clove
- 1 piece ginger (fresh, walnut-sized)
Instructions
- 1. Cut the pumpkin into small cubes.
- 2. Place the pumpkin cubes in a pot.
- 3. Pour in enough water to just cover the vegetables.
- 4. Add the wine vinegar, sugar, and salt to the pot.
- 5. Add the cinnamon stick and cloves to the mixture.
- 6. Cut the ginger into thin strips and add it.
- 7. Bring the mixture to a boil on the stove.
- 8. Reduce the heat to the lowest setting.
- 9. Let the compote simmer gently for 6 to 8 minutes.
- 10. Fill the hot mixture immediately into small preserving jars.
- 11. Seal the jars tightly.
- 12. Store the compote in the refrigerator.
- 13. Consume it within 3 to 4 weeks.
- 14. Serve the compote with savory roast dishes.
