  1. 1. Heat a non-stick pan on the stove without adding any oil or butter.
  2. 2. Add the pumpkin seeds to the hot pan.
  3. 3. Stir the seeds constantly until they smell nutty and some of them start to pop open.
  4. 4. Remove the pan from the heat and pour the seeds onto a plate.
  5. 5. Let the seeds cool down completely.
  6. 6. Take about one quarter of the cooled seeds and set them aside for garnishing later.
  7. 7. Finely chop the remaining seeds.
  8. 8. Peel the garlic clove.
  9. 9. Finely chop the garlic as well.
  10. 10. Wash the chives thoroughly.
  11. 11. Shake the chives dry to remove excess water.
  12. 12. Cut the chives into small rings.
  13. 13. Place the quark into a large mixing bowl.
  14. 14. Add the chopped pumpkin seeds, chopped garlic, and chive rings to the quark.
  15. 15. Add the pumpkin seed oil.
  16. 16. Mix all ingredients thoroughly together.
  17. 17. Season the mixture with salt and pepper to taste.
  18. 18. Serve the quark dip on whole grain bread.
  19. 19. Garnish the dip with the whole pumpkin seeds you set aside earlier.
  20. 20. Alternatively, you can serve the dip with boiled potatoes.
