  1. 1. Dissolve the yeast in 220 ml of lukewarm water.
  2. 2. Add both types of flour, the butter, the sugar, the salt, and the pumpkin seeds.
  3. 3. Stir everything together into a thick dough.
  4. 4. Cover the dough and let it rise in a warm place for approx. 2 hours.
  5. 5. Transfer the dough into a lined loaf pan.
  6. 6. Cover the pan and let the dough rise for approx. 75 minutes.
  7. 7. Preheat the oven to 180 °C with top and bottom heat.
  8. 8. Brush the egg yolk over the surface of the dough.
  9. 9. Sprinkle more pumpkin seeds on top.
  10. 10. Bake the bread in the oven for approx. 55 minutes.
