Ingredients
- 50 g vegan dark chocolate
- 60 g coconut oil
- 80 g whole cane sugar
- 220 g spelt flour Type 1050
- 1 tsp baking powder
- 0.5 tsp cinnamon
- 1 pinch ground cardamom
- 1 pinch ground nutmeg
- 1 pinch salt
- 120 g pumpkin puree
Instructions
- 1. Chop the chocolate into small pieces and set aside.
- 2. Stir the coconut oil with the full cane sugar in a bowl.
- 3. Add the flour and the baking powder to the mixture.
- 4. Add the spices and a pinch of salt.
- 5. Mix all ingredients well until they combine.
- 6. Stir the pumpkin puree into the dough.
- 7. Fold in the chopped chocolate at the end.
- 8. Take one tablespoon of dough at a time and place it on a baking sheet lined with baking paper.
- 9. Press the dough portions slightly flat.
- 10. Preheat the oven to 180 degrees (convection: 160 degrees; gas: level 2 to 3).
- 11. Bake the cookies for 10 to 12 minutes.
- 12. Remove the cookies from the oven.
- 13. Let the cookies cool down.
