🍽️ Fried pumpkin with porcini mushrooms and green pepper

Ingredients
- 1 kg pumpkin flesh (e.g. Muscat)
- 2 tbsp rapeseed oil
- salt
- 200 g porcini mushrooms
- 1 garlic clove
- chopped parsley
- parsley
- fresh green peppercorns (or from a jar)
Instructions
- 1. Cut the pumpkin flesh into bite-sized cubes.
- 2. Heat oil in a frying pan (preferably non-stick) until it is hot.
- 3. Fry the pumpkin cubes for about 5 minutes until lightly browned.
- 4. Season the vegetables with salt and add a small splash of water.
- 5. Simmer the pumpkin with the lid on for about 5 minutes until almost tender.
- 6. Remove the lid and let the remaining liquid evaporate completely.
- 7. Clean the porcini mushrooms and cut them into small pieces as well.
- 8. Peel the garlic and slice it into thin pieces.
- 9. Add the mushrooms and garlic to the pumpkin in the pan.
- 10. Fry everything together for about 5 minutes until golden brown.
- 11. Finally, season the dish to taste with salt.
- 12. Transfer the vegetables into a serving bowl.
- 13. Garnish the dish with fresh parsley and green pepper.
- 14. Serve the dish warm.
