🍽️ Savory Pumpkin and Plum Vegetable Dish

Ingredients
- 400 g plums
- 400 g Hokkaido pumpkin
- 2 shallots
- 2 cloves
- 0.5 tsp coriander
- 2 tbsp grape seed oil
- 50 ml red wine
- salt
- ground allspice
- pepper (from the mill)
Instructions
- 1. Wash the plums thoroughly.
- 2. Remove the pits from the plums.
- 3. Cut the plums into quarters.
- 4. Remove the inside of the pumpkin.
- 5. Rinse the pumpkin.
- 6. Cut the pumpkin into thin sticks.
- 7. Peel the shallots.
- 8. Dice the shallots finely.
- 9. Heat oil in a pan.
- 10. Add the shallots, pumpkin, cloves, and coriander to the hot pan.
- 11. Sauté the ingredients for 1 to 2 minutes.
- 12. Deglaze the mixture with red wine.
- 13. Cover the pan.
- 14. Cook the vegetables on low heat for about 5 minutes.
- 15. Ensure the vegetables remain al dente.
- 16. Fold the plums into the vegetable mixture.
- 17. Simmer the dish for another 2 minutes without the lid.
- 18. Season with salt, allspice, and pepper.
- 19. Remove the cloves before serving.
