🍽️ Crispy Pumpkin Fries with Fresh Orange Spinach Salad

Ingredients
- 600 g Butternut squash
- 1 egg
- 20 g cornstarch (2–3 tbsp)
- pepper
- paprika powder
- 0.25 tsp dried thyme
- 100 g baby spinach
- 1 red onion
- 1 clove of garlic
- 1 orange
- 2 tbsp white balsamic vinegar
- 1 tbsp rapeseed oil
- 1 tsp honey
- salt
- 45 g pumpkin seeds
- coarse sea salt
Instructions
- 1. Remove the seeds and the skin from the pumpkin.
- 2. Cut the flesh into thin sticks, similar to french fries.
- 3. Separate the egg: Use the yolk for another purpose and keep only the egg white.
- 4. Whip the egg white stiffly with a mixer or whisk until it is firm.
- 5. Set the whipped egg white aside.
- 6. Mix the starch with the spices in a shallow bowl.
- 7. Toss the pumpkin pieces in the starch mixture first.
- 8. Then toss the dusted pumpkin pieces in the whipped egg white.
- 9. Line a baking tray with baking paper.
- 10. Place the pumpkin fries on the tray.
- 11. Preheat the oven.
- 12. Bake the fries at 200 degrees conventional heat, 180 degrees fan-forced, or gas mark 3 for about 15 minutes.
- 13. Switch the oven to the highest grill setting.
- 14. Brown the fries for another 5 minutes under the grill.
- 15. Wash the spinach thoroughly.
- 16. Shake the spinach dry.
- 17. Roughly chop the spinach if the leaves are very large.
- 18. Peel the onion.
- 19. Slice the onion into rings.
- 20. Peel the garlic clove.
- 21. Finely chop the garlic.
- 22. Peel the orange.
- 23. Cut the fruit segments out of the orange.
- 24. Catch the released orange juice in the process.
- 25. Mix the orange juice with vinegar, oil, honey, the chopped garlic, salt, and pepper.
- 26. Stir the ingredients into a uniform dressing.
- 27. Place the spinach into small bowls.
- 28. Distribute the orange segments over the spinach.
- 29. Add the onion rings on top.
- 30. Sprinkle pumpkin seeds over it.
- 31. Drizzle the salad with the dressing.
- 32. Take the fries out of the oven.
- 33. Sprinkle sea salt over the hot fries.
- 34. Serve the fries together with the spinach salad.
