🥗 Crispy Pumpkin Parsnip Fritters with Fresh Salad

Ingredients
- 500 g Parsnips
- 2 cm Ginger
- 500 g Pumpkin flesh e.g. Hokkaido (seeded and peeled)
- 2 Eggs
- 1 tbsp Cornstarch
- 60 g freshly grated hard cheese (e.g. Parmesan or Pecorino)
- 0.5 tsp Curry powder
- Salt
- Nutmeg (freshly grated)
- Pepper (from the mill)
- Ghee (for frying)
Instructions
- 1. Peel the parsnips and the ginger root.
- 2. Grate the pumpkin, parsnips, and ginger finely.
- 3. Place the grated ingredients into a large bowl.
- 4. Add the eggs, the starch, the cheese, and the curry powder.
- 5. Mix everything thoroughly together.
- 6. Season the mixture with salt, nutmeg, and pepper.
- 7. Heat ghee (clarified butter) in a frying pan.
- 8. Take a tablespoon of the mixture and form a small mound.
- 9. Carefully place the mound into the hot fat.
- 10. Fry the fritters on each side for about 3 to 4 minutes until golden brown.
- 11. Remove the finished fritters from the pan.
- 12. Place them on kitchen paper to absorb excess fat.
- 13. Serve the warm fritters with a colorful green salad.
