🍽️ Creamy Pumpkin and Potato Mash

Ingredients
- 400 g mealy cooking potatoes
- 600 g pumpkin flesh
- 1 tbsp butter
- 150 ml hot milk
- 2 tbsp pumpkin seed oil
- salt
- nutmeg
- 2 tbsp pumpkin seeds
Instructions
- 1. Peel the potatoes and cut them into evenly sized pieces.
- 2. Place the potato pieces in a pot with salted water.
- 3. Bring the water to a boil and cook the potatoes for about 30 minutes until tender.
- 4. Meanwhile, take a pan or pot and add the diced pumpkin flesh.
- 5. Add the butter and about 3 tablespoons of water to the pumpkin.
- 6. Simmer the pumpkin over medium heat for about 20 minutes until soft.
- 7. Drain the cooked potatoes once they are tender.
- 8. Press the hot potatoes through a potato ricer or mash them finely.
- 9. Stir the hot milk and oil into the mashed potatoes.
- 10. Puree the cooked pumpkin until it forms a smooth mixture.
- 11. Fold the pumpkin puree into the potato mash and mix everything well.
- 12. Season the mash to taste with salt and nutmeg.
- 13. Place the pumpkin seeds in a dry pan.
- 14. Roast the seeds without additional fat until they are fragrant and lightly browned.
- 15. Spoon the mash into a serving bowl.
- 16. Sprinkle the roasted pumpkin seeds over the mash and serve warm.
