  1. 1. Peel the potatoes and cut them into evenly sized pieces.
  2. 2. Place the potato pieces in a pot with salted water.
  3. 3. Bring the water to a boil and cook the potatoes for about 30 minutes until tender.
  4. 4. Meanwhile, take a pan or pot and add the diced pumpkin flesh.
  5. 5. Add the butter and about 3 tablespoons of water to the pumpkin.
  6. 6. Simmer the pumpkin over medium heat for about 20 minutes until soft.
  7. 7. Drain the cooked potatoes once they are tender.
  8. 8. Press the hot potatoes through a potato ricer or mash them finely.
  9. 9. Stir the hot milk and oil into the mashed potatoes.
  10. 10. Puree the cooked pumpkin until it forms a smooth mixture.
  11. 11. Fold the pumpkin puree into the potato mash and mix everything well.
  12. 12. Season the mash to taste with salt and nutmeg.
  13. 13. Place the pumpkin seeds in a dry pan.
  14. 14. Roast the seeds without additional fat until they are fragrant and lightly browned.
  15. 15. Spoon the mash into a serving bowl.
  16. 16. Sprinkle the roasted pumpkin seeds over the mash and serve warm.
