🍽️ Pumpkin Cubes in Caramelized Butter Sauce

Ingredients
- 500 g pumpkin flesh
- 1 bunch spring onions
- 2 chili peppers
- 2 garlic cloves
- 4 tbsp sugar
- 2 tbsp butter
- 1 lime (zest and juice)
- 30 g pumpkin seeds
- salt
- pepper (from the mill)
- 200 g long-grain rice
Instructions
- 1. Cut the pumpkin into large cubes.
- 2. Wash the spring onions and cut them into small pieces.
- 3. Slit the chili peppers lengthwise.
- 4. Remove the seeds from the chili peppers under running water.
- 5. Finely chop the deseeded chili peppers.
- 6. Peel the garlic.
- 7. Dice the garlic.
- 8. Boil the pumpkin in salted water for about 15 minutes.
- 9. Drain the pumpkin.
- 10. Let the pumpkin drip dry.
- 11. Add sugar and 2 tablespoons of water to a pan.
- 12. Heat the pan and stir the sugar slowly until it caramelizes to a golden brown color.
- 13. Remove the pan from the heat.
- 14. Add the butter to the pan and let it melt.
- 15. Place the pan back on the heat.
- 16. Add the pumpkin, spring onions, chili, and garlic to the pan.
- 17. Toss the ingredients in the pan for 2 to 3 minutes.
- 18. Add the grated zest of a lime to the pan.
- 19. Add the juice of a lime to the pan.
- 20. Add the pumpkin seeds to the pan.
- 21. Season the dish to taste with salt and pepper.
- 22. Serve the dish with rice.
