🍰 Orange-Almond Cake in a Jar

Ingredients
- 1 organic orange
- 100 g raisins
- 40 g whole almond kernels
- 200 g butter
- 4 eggs
- 120 g coconut blossom sugar
- 300 g whole wheat flour
- 2 tsp baking powder
- 1 pinch salt
- 50 g ground almonds
- 0.25 tsp cardamom
- 0.25 tsp ground ginger
- butter (for the jars)
- whole wheat breadcrumbs (for the jars)
Instructions
- 1. Rinse the orange under hot water and pat it dry.
- 2. Finely grate the orange peel and squeeze out the juice.
- 3. Soak the raisins in three tablespoons of the orange juice.
- 4. Briefly pour boiling water over the almonds (blanch) to loosen the skin.
- 5. Remove the almond skins and dry the nuts.
- 6. Melt the butter and let it cool down briefly.
- 7. Whisk the eggs and coconut blossom sugar until frothy.
- 8. Stir the melted butter into the egg mixture.
- 9. Mix flour, baking powder, and salt in a separate bowl.
- 10. Gently fold the flour mixture into the liquid mixture.
- 11. Add the drained raisins, ground almonds, orange peel, and spices.
- 12. Grease the jars with butter and coat them with breadcrumbs.
- 13. Fill the jars with the batter.
- 14. Fill the jars only halfway if you plan to gift them with lids.
- 15. Distribute the whole almonds on top of the batter.
- 16. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan-forced).
- 17. Bake the cakes for about 30 minutes.
- 18. Seal the jars with the lid immediately after baking.
- 19. Let the cakes cool down in the jars.
