  1. 1. Rinse the orange under hot water and pat it dry.
  2. 2. Finely grate the orange peel and squeeze out the juice.
  3. 3. Soak the raisins in three tablespoons of the orange juice.
  4. 4. Briefly pour boiling water over the almonds (blanch) to loosen the skin.
  5. 5. Remove the almond skins and dry the nuts.
  6. 6. Melt the butter and let it cool down briefly.
  7. 7. Whisk the eggs and coconut blossom sugar until frothy.
  8. 8. Stir the melted butter into the egg mixture.
  9. 9. Mix flour, baking powder, and salt in a separate bowl.
  10. 10. Gently fold the flour mixture into the liquid mixture.
  11. 11. Add the drained raisins, ground almonds, orange peel, and spices.
  12. 12. Grease the jars with butter and coat them with breadcrumbs.
  13. 13. Fill the jars with the batter.
  14. 14. Fill the jars only halfway if you plan to gift them with lids.
  15. 15. Distribute the whole almonds on top of the batter.
  16. 16. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan-forced).
  17. 17. Bake the cakes for about 30 minutes.
  18. 18. Seal the jars with the lid immediately after baking.
  19. 19. Let the cakes cool down in the jars.
