🍰 Cake with Kefir

Ingredients
- 100 g Butter
- 100 g Sugar
- 150 g Flour
- 50 g ground hazelnuts
- 1 Egg
- 4 Eggs
- 500 ml Kefir
- 100 g Sugar
- 50 g Cornstarch
- Red currants
- Icing sugar
Instructions
- 1. Break the butter into small pieces.
- 2. Mix the butter pieces with sugar, flour, hazelnuts, and one egg.
- 3. Knead the ingredients into a smooth and firm dough.
- 4. Shape the dough into a ball.
- 5. Wrap the dough ball in cling film.
- 6. Place the foil in the refrigerator and let the dough rest for 30 minutes.
- 7. Take the dough out of the refrigerator.
- 8. Roll out the dough on a floured surface to a thickness of 1/2 cm.
- 9. Grease a springform pan with some fat.
- 10. Place the rolled-out dough into the greased springform pan.
- 11. Separate the eggs by separating the yolk from the white.
- 12. Whisk the kefir with sugar and the egg yolks.
- 13. Whip the egg white into a firm foam.
- 14. Fold the starch into the kefir mixture.
- 15. Fold the whipped egg white into the kefir mixture.
- 16. Pour the mixture into the prepared cake pan.
- 17. Preheat the oven to 180 degrees.
- 18. Bake the cake in the preheated oven for approx. 45 minutes until golden yellow.
- 19. Take the cake out of the oven.
- 20. Let the cake cool down.
- 21. Dust the cooled cake with powdered sugar.
- 22. Garnish the cake with redcurrants.
- 23. Serve the cake.
