  1. 1. Break the butter into small pieces.
  2. 2. Mix the butter pieces with sugar, flour, hazelnuts, and one egg.
  3. 3. Knead the ingredients into a smooth and firm dough.
  4. 4. Shape the dough into a ball.
  5. 5. Wrap the dough ball in cling film.
  6. 6. Place the foil in the refrigerator and let the dough rest for 30 minutes.
  7. 7. Take the dough out of the refrigerator.
  8. 8. Roll out the dough on a floured surface to a thickness of 1/2 cm.
  9. 9. Grease a springform pan with some fat.
  10. 10. Place the rolled-out dough into the greased springform pan.
  11. 11. Separate the eggs by separating the yolk from the white.
  12. 12. Whisk the kefir with sugar and the egg yolks.
  13. 13. Whip the egg white into a firm foam.
  14. 14. Fold the starch into the kefir mixture.
  15. 15. Fold the whipped egg white into the kefir mixture.
  16. 16. Pour the mixture into the prepared cake pan.
  17. 17. Preheat the oven to 180 degrees.
  18. 18. Bake the cake in the preheated oven for approx. 45 minutes until golden yellow.
  19. 19. Take the cake out of the oven.
  20. 20. Let the cake cool down.
  21. 21. Dust the cooled cake with powdered sugar.
  22. 22. Garnish the cake with redcurrants.
  23. 23. Serve the cake.
