🍰 Amarena Cherry Cake with Chocolate Glaze

Ingredients

- 200 g Amarena cherries (jar)
- flour (for dusting)
- 200 g butter
- 1 tbsp beet syrup
- 150 g sugar
- 4 eggs
- 100 g amarettini
- 300 g flour
- 2 tsp baking powder
- 120 ml milk
- 125 ml whipping cream
- 1 tsp coffee (instant)
- 250 g dark chocolate
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Grease a loaf pan with butter.
- 3. Dust the greased pan with flour.
- 4. Drain the Amarena cherries over a sieve.
- 5. Dust the drained cherries with flour.
- 6. Beat the butter with the syrup and sugar until creamy.
- 7. Beat the eggs into the butter mixture one by one.
- 8. Place the amaretti cookies in a freezer bag.
- 9. Crush the amaretti cookies finely with a rolling pin.
- 10. Mix the crushed amaretti with the flour and baking powder.
- 11. Stir the dry mixture and the milk alternately into the butter mixture.
- 12. Mix everything into a smooth batter.
- 13. Fold the cherries into the batter at the end.
- 14. Pour the batter into the prepared pan.
- 15. Spread the batter evenly in the pan.
- 16. Bake the cake in the preheated oven for 45 to 60 minutes.
- 17. Perform the skewer test to check the baking time.
- 18. Heat the cream with the coffee in a saucepan.
- 19. Chop the chocolate coarsely.
- 20. Add the chopped chocolate to the hot cream.
- 21. Let the chocolate melt in the cream.
- 22. Remove the saucepan from the heat.
- 23. Let the chocolate mixture cool down.
- 24. Wait until the mixture becomes thick.
- 25. Take the cake out of the oven.
- 26. Let the cake cool down.
- 27. Turn the cake out of the pan.
- 28. Let the cake cool completely.
- 29. Spread the chocolate cream over the cake.
- 30. Let the chocolate cream dry.
- 31. Slice the cake.
- 32. Serve the cake slices.
