🍽️ Colorful Quark with Cress Eggs and Spicy Goat Fresh Cheese

Ingredients
- 150 g goat fresh cheese
- 100 g fresh cheese
- 1.5 tbsp wild garlic pesto (jar)
- salt
- pepper (from the mill)
- 1 pinch ground cumin
- 1 pinch ground coriander
- 1 hard-boiled egg
- 180 g low-fat quark
- 60 g sour cream
- 1 tsp medium-hot mustard
- salt
- cayenne pepper
- 0.5 box garden cress
Instructions
- 1. Take a bowl and add both types of fresh cheese.
- 2. Stir the fresh cheeses with a spoon or fork until the mixture is completely smooth and free of lumps.
- 3. Add the pesto to the bowl and stir it into the cheese mixture.
- 4. Season the mixture with a pinch of salt, black pepper, cumin, and ground coriander.
- 5. Let the goat fresh cheese mixture rest in a cool place for about 30 minutes to allow the flavors to meld.
- 6. Take the boiled egg and carefully remove the shell.
- 7. Finely chop the egg with a knife.
- 8. Place the quark (curd cheese) into a clean bowl.
- 9. Add the sour cream and mustard to the quark.
- 10. Stir the quark mixture until smooth with no lumps remaining.
- 11. Season the quark cream with salt and a pinch of cayenne pepper.
- 12. Cut off some fresh cress sprouts using kitchen or tea scissors.
- 13. Set aside a few of the cress sprouts to use as decoration later.
- 14. Add the remaining part of the cut cress to the quark mixture.
- 15. Take three-quarters of the finely chopped eggs and fold them into the quark.
- 16. Fill the quark mixture into small bowls.
- 17. Garnish the quark bowls with the remaining chopped eggs and the saved cress sprouts.
