  1. 1. Melt the butter in a pot.
  2. 2. Let the butter cool down briefly.
  3. 3. Mix rice flour, regular flour, sugar, curry, and a pinch of salt in a bowl.
  4. 4. Separate the eggs.
  5. 5. Keep the egg yolks cold and use them later for something else.
  6. 6. Stir the egg whites into the flour mixture using a whisk.
  7. 7. Fold the melted butter into the mixture.
  8. 8. Fold the whipping cream into the mixture.
  9. 9. Line a baking sheet with baking paper.
  10. 10. Place the mixture in portions onto the sheet using a tablespoon.
  11. 11. Stretch the portions into long, narrow strips using the back of the spoon.
  12. 12. Preheat the oven to 200 °C (fan: 180 °C, gas: setting 3).
  13. 13. Bake the hippen in the center of the oven for about 7 minutes until golden brown.
  14. 14. Transfer the baked hippen to an oven rack using a spatula.
  15. 15. Let the hippen cool down.
  16. 16. Make more hippen from the remaining mixture.
  17. 17. Store the hippen airtight until you need them.
  18. 18. Drain the crab meat.
  19. 19. Place the crab meat in a bowl.
  20. 20. Squeeze the lemon.
  21. 21. Whisk together 2 tablespoons of lemon juice, olive oil, and sour cream.
  22. 22. Set aside one third of the sauce.
  23. 23. Mix the remaining sauce with the crab meat.
  24. 24. Wash the spring onions.
  25. 25. Clean the spring onions.
  26. 26. Slice the spring onions into very fine rings.
  27. 27. Wash the apple.
  28. 28. Slice the apple and remove the core.
  29. 29. Dice the apple very finely.
  30. 30. Wash the tomatoes.
  31. 31. Quarter the tomatoes.
  32. 32. Remove the seeds from the tomatoes.
  33. 33. Dice the tomatoes finely.
  34. 34. Mix 1 tablespoon each of the diced apple and tomatoes with the reserved sauce.
  35. 35. Season the sauce with salt and pepper.
  36. 36. Fold the remaining diced apple and tomatoes into the crab meat.
  37. 37. Fold the spring onions into the crab meat.
  38. 38. Season the crab salad with salt and pepper.
  39. 39. Build small towers on 4 plates using 3 hippen and crab salad each.
  40. 40. Drizzle the sauce around the towers.
  41. 41. Garnish the dish with chervil if desired.
  42. 42. Serve the dish.
