🍽️ Crab Salad Towers

Ingredients
- 50 g Butter
- 80 g Rice flour
- 1 tbsp Flour (Type 405)
- 1 tsp Cane sugar
- 1 tbsp Curry powder
- 0.5 tsp Salt
- 3 Egg whites
- 1 tbsp Heavy cream
- 500 g Crayfish tails
- 0.5 Lemon
- 2 tbsp Olive oil
- 5 tbsp Sour cream
- 2 Spring onions
- 1 green, tart Apple
- 2 small Tomatoes
- Chervil (for garnish)
Instructions
- 1. Melt the butter in a pot.
- 2. Let the butter cool down briefly.
- 3. Mix rice flour, regular flour, sugar, curry, and a pinch of salt in a bowl.
- 4. Separate the eggs.
- 5. Keep the egg yolks cold and use them later for something else.
- 6. Stir the egg whites into the flour mixture using a whisk.
- 7. Fold the melted butter into the mixture.
- 8. Fold the whipping cream into the mixture.
- 9. Line a baking sheet with baking paper.
- 10. Place the mixture in portions onto the sheet using a tablespoon.
- 11. Stretch the portions into long, narrow strips using the back of the spoon.
- 12. Preheat the oven to 200 °C (fan: 180 °C, gas: setting 3).
- 13. Bake the hippen in the center of the oven for about 7 minutes until golden brown.
- 14. Transfer the baked hippen to an oven rack using a spatula.
- 15. Let the hippen cool down.
- 16. Make more hippen from the remaining mixture.
- 17. Store the hippen airtight until you need them.
- 18. Drain the crab meat.
- 19. Place the crab meat in a bowl.
- 20. Squeeze the lemon.
- 21. Whisk together 2 tablespoons of lemon juice, olive oil, and sour cream.
- 22. Set aside one third of the sauce.
- 23. Mix the remaining sauce with the crab meat.
- 24. Wash the spring onions.
- 25. Clean the spring onions.
- 26. Slice the spring onions into very fine rings.
- 27. Wash the apple.
- 28. Slice the apple and remove the core.
- 29. Dice the apple very finely.
- 30. Wash the tomatoes.
- 31. Quarter the tomatoes.
- 32. Remove the seeds from the tomatoes.
- 33. Dice the tomatoes finely.
- 34. Mix 1 tablespoon each of the diced apple and tomatoes with the reserved sauce.
- 35. Season the sauce with salt and pepper.
- 36. Fold the remaining diced apple and tomatoes into the crab meat.
- 37. Fold the spring onions into the crab meat.
- 38. Season the crab salad with salt and pepper.
- 39. Build small towers on 4 plates using 3 hippen and crab salad each.
- 40. Drizzle the sauce around the towers.
- 41. Garnish the dish with chervil if desired.
- 42. Serve the dish.
