🍽️ Crispy Crab Meat Fritters

Ingredients
- 1 shallot
- 1 garlic clove
- 2 bell peppers (yellow and red)
- 1 mild red chili
- 2 spring onions
- 1 tbsp olive oil
- 1 tbsp fresh chopped cilantro
- 1 tbsp fresh chopped parsley
- 2 tbsp Worcestershire sauce
- 1 tsp hot mustard
- 1 tbsp lemon juice
- 1 egg
- 2 tbsp mayonnaise
- salt
- pepper (from the mill)
- 500 g crab meat
- 3 tbsp breadcrumbs
- 3 tbsp ghee
Instructions
- 1. Peel the shallot and garlic and chop them very finely.
- 2. Wash the bell pepper and chili, remove the seeds and white inner membranes, and dice the vegetables into small pieces.
- 3. Wash the spring onions, trim them, and slice them into thin rings.
- 4. Heat the oil in a pan and sauté the shallots and garlic until translucent.
- 5. Briefly fry the bell pepper and chili cubes.
- 6. Remove the pan from the heat.
- 7. Stir in the spring onions, herbs, Worcestershire sauce, mustard, and lemon juice.
- 8. Mix in the egg and mayonnaise.
- 9. Season the filling with salt and pepper.
- 10. Shred the crab meat and remove any shell fragments.
- 11. Fold the breadcrumb crumbs into the crab meat mixture.
- 12. Mix everything well so that the crumbs are evenly distributed.
- 13. Shape the mixture into about 8 to 10 small fritters.
- 14. Heat ghee (clarified butter) in a hot pan.
- 15. Fry the fritters slowly for approx. 8 minutes until golden brown on both sides.
- 16. Turn the fritters occasionally while frying.
- 17. Let the finished fritters drain on kitchen paper.
- 18. Serve the fritters with various dips or coleslaw.
