🍽️ Crab Meat and Avocado Sandwich

Ingredients
- 2 ripe avocados
- 2 tbsp lime juice
- 4 tbsp crème fraîche
- salt
- cayenne pepper
- 180 g river crayfish (kitchen-ready and pre-cooked; refrigerated section)
- 12 slices whole grain bread (e.g. with carrots and seeds)
Instructions
- 1. Cut the avocados in half and remove the pits. Carefully scoop the flesh out of the skin, dice it into small cubes, and mix it immediately with the lime juice to prevent browning.
- 2. Mash the avocado flesh with a fork and stir in the crème fraîche (a sour cream alternative). Season the mixture with salt and cayenne pepper. Rinse the crab meat briefly, pat it dry, and cut it into coarse pieces.
- 3. Spread the avocado mixture and crab meat onto eight slices of bread. Stack two filled slices on top of each other and close each stack with an unspread slice of bread as a lid.
