🥗 Crab Meat Salad with Tomato Sorbet

Ingredients
- 400 g cooked crab meat
- 0.5 bunch Thai basil
- 1 tsp ginger (freshly grated)
- 1 chili pepper
- lime juice
- 4 slices dried tomatoes
- 600 g tomatoes
- 20 ml gin
- salt
- pepper (from the mill)
- 0.5 tsp sugar
Instructions
- 1. Take the chili peppers and chop them very finely.
- 2. Finely mince the crab meat by chopping it or pulsing it briefly in a blender.
- 3. Place the minced crab meat into a bowl.
- 4. Add finely chopped Thai basil.
- 5. Add the finely chopped ginger.
- 6. Mix everything together with the finely chopped chili.
- 7. Season the mixture finally with lime juice.
- 8. Take a cake ring and place it on a plate.
- 9. Press the crab meat mixture firmly into the cake ring.
- 10. Carefully remove the ring straight up.
- 11. Pour boiling water over the dried tomatoes briefly.
- 12. Shock the tomatoes immediately in cold water to loosen the skin.
- 13. Peel the tomatoes and remove the skin.
- 14. Cut the cored tomatoes into quarters.
- 15. Remove the tough core from the tomato pieces.
- 16. Chop the tomato pieces roughly.
- 17. Puree the tomatoes finely until smooth.
- 18. Season the tomato puree with a splash of gin.
- 19. Add salt and pepper.
- 20. Add some sugar and stir well.
- 21. Pour the mixture into a shallow metal tray.
- 22. Place the tray in the freezer for about 3 hours.
- 23. Stir the mixture well repeatedly during the initial period to prevent ice crystals.
- 24. Fluff the frozen sorbet with a fork before serving.
- 25. Shape a scoop using an ice cream scoop.
- 26. Serve the crab meat salad alongside the tomato sorbet.
- 27. Garnish the salad with the prepared dried tomatoes according to your preference.
