  1. 1. Take the chili peppers and chop them very finely.
  2. 2. Finely mince the crab meat by chopping it or pulsing it briefly in a blender.
  3. 3. Place the minced crab meat into a bowl.
  4. 4. Add finely chopped Thai basil.
  5. 5. Add the finely chopped ginger.
  6. 6. Mix everything together with the finely chopped chili.
  7. 7. Season the mixture finally with lime juice.
  8. 8. Take a cake ring and place it on a plate.
  9. 9. Press the crab meat mixture firmly into the cake ring.
  10. 10. Carefully remove the ring straight up.
  11. 11. Pour boiling water over the dried tomatoes briefly.
  12. 12. Shock the tomatoes immediately in cold water to loosen the skin.
  13. 13. Peel the tomatoes and remove the skin.
  14. 14. Cut the cored tomatoes into quarters.
  15. 15. Remove the tough core from the tomato pieces.
  16. 16. Chop the tomato pieces roughly.
  17. 17. Puree the tomatoes finely until smooth.
  18. 18. Season the tomato puree with a splash of gin.
  19. 19. Add salt and pepper.
  20. 20. Add some sugar and stir well.
  21. 21. Pour the mixture into a shallow metal tray.
  22. 22. Place the tray in the freezer for about 3 hours.
  23. 23. Stir the mixture well repeatedly during the initial period to prevent ice crystals.
  24. 24. Fluff the frozen sorbet with a fork before serving.
