🍽️ Homemade Cabbage Rolls

Ingredients
- 18 leaves white cabbage (as large as possible)
- 1 red bell pepper
- 1 onion
- 1 clove garlic
- 5 tbsp parsley
- 400 g mixed minced meat
- 4 tbsp breadcrumbs
- 1 egg
- 2 tbsp medium-hot mustard
- 2 tbsp ghee
- 1 bottle dark beer (alternatively non-alcoholic Altbier)
- 1 tsp granulated broth
- thickener (as needed)
Instructions
- 1. Trim the thick central ribs from 12 intact cabbage leaves.
- 2. Blanch the cabbage leaves in boiling salted water for about 2 minutes to soften them.
- 3. Remove the leaves from the water and immediately cool them in cold water.
- 4. Remove the hard core from the remaining cabbage leaves and chop the leafy parts very finely.
- 5. Wash the pepper, remove the stem and seeds, halve it, and remove the white inner membrane.
- 6. Dice the pepper into very small cubes.
- 7. Peel the onion and garlic and dice both very finely as well.
- 8. Wash the parsley and chop it finely.
- 9. In a large bowl, mix the minced meat with the finely chopped cabbage, diced pepper, onion, garlic, breadcrumbs, egg, and mustard.
- 10. Season the meat mixture generously with salt and pepper.
- 11. Place a portion of the meat mixture onto each prepared cabbage leaf.
- 12. Fold the sides of the cabbage leaf over the filling and roll it up tightly.
- 13. Tie the rolls securely with kitchen twine if necessary to prevent them from unraveling.
- 14. Heat the butter fat (clarified butter) in a large casserole dish.
- 15. Fry the cabbage rolls on all sides until they are golden brown.
- 16. Deglaze the rolls with the beer.
- 17. Add 1 teaspoon of granulated broth to the liquid.
- 18. Simmer the cabbage rolls in the covered pot for about 1 hour.
- 19. Turn the rolls occasionally and baste them repeatedly with the cooking juices.
- 20. Remove the finished rolls from the pot and set them aside.
- 21. Thicken the sauce in the pot with a little sauce thickener until it reaches the desired consistency.
