  1. 1. Trim the thick central ribs from 12 intact cabbage leaves.
  2. 2. Blanch the cabbage leaves in boiling salted water for about 2 minutes to soften them.
  3. 3. Remove the leaves from the water and immediately cool them in cold water.
  4. 4. Remove the hard core from the remaining cabbage leaves and chop the leafy parts very finely.
  5. 5. Wash the pepper, remove the stem and seeds, halve it, and remove the white inner membrane.
  6. 6. Dice the pepper into very small cubes.
  7. 7. Peel the onion and garlic and dice both very finely as well.
  8. 8. Wash the parsley and chop it finely.
  9. 9. In a large bowl, mix the minced meat with the finely chopped cabbage, diced pepper, onion, garlic, breadcrumbs, egg, and mustard.
  10. 10. Season the meat mixture generously with salt and pepper.
  11. 11. Place a portion of the meat mixture onto each prepared cabbage leaf.
  12. 12. Fold the sides of the cabbage leaf over the filling and roll it up tightly.
  13. 13. Tie the rolls securely with kitchen twine if necessary to prevent them from unraveling.
  14. 14. Heat the butter fat (clarified butter) in a large casserole dish.
  15. 15. Fry the cabbage rolls on all sides until they are golden brown.
  16. 16. Deglaze the rolls with the beer.
  17. 17. Add 1 teaspoon of granulated broth to the liquid.
  18. 18. Simmer the cabbage rolls in the covered pot for about 1 hour.
  19. 19. Turn the rolls occasionally and baste them repeatedly with the cooking juices.
  20. 20. Remove the finished rolls from the pot and set them aside.
  21. 21. Thicken the sauce in the pot with a little sauce thickener until it reaches the desired consistency.
