🍽️ Hearty Cabbage Soup with Crispy Bacon

Ingredients
- 200 g dried beans (red and white)
- 500 g white cabbage
- 250 g floury potatoes
- 2 garlic cloves
- 2 tbsp butter
- 800 ml vegetable broth
- salt
- pepper (from the mill)
- nutmeg
- 100 g bacon cubes
- 1 tbsp freshly chopped parsley
Instructions
- 1. Soak the beans in water overnight.
- 2. Wash the cabbage and remove the hard core.
- 3. Cut the cabbage leaves into small pieces.
- 4. Peel the potatoes and cut them into cubes.
- 5. Peel the garlic and chop it finely.
- 6. Heat butter in a pot.
- 7. Sauté the garlic and cabbage in the hot butter.
- 8. Deglaze the vegetables with the broth.
- 9. Add the potatoes and the soaked beans to the pot.
- 10. Season the soup with salt, pepper, and nutmeg.
- 11. Simmer the soup, stirring occasionally, for about 45 minutes until everything is cooked through.
- 12. Add the bacon cubes and let them simmer in the soup for another 5 minutes.
- 13. Finely chop the parsley and stir it into the finished soup.
- 14. Finally, adjust the seasoning of the soup with salt and pepper.
- 15. Serve the warm soup.
