  1. 1. Trim the thick center ribs from 12 white cabbage leaves flat.
  2. 2. Blanch the cabbage leaves in boiling salted water for about 2 minutes to soften them.
  3. 3. Remove the leaves from the water and shock them immediately in cold water.
  4. 4. Remove the hard core from the remaining cabbage leaves.
  5. 5. Finely chop the remaining cabbage.
  6. 6. Wash the pepper, halve it, and remove the seeds and white membrane.
  7. 7. Dice the pepper into very small cubes.
  8. 8. Peel the onion and garlic.
  9. 9. Dice the onion and garlic very finely as well.
  10. 10. Wash the parsley and chop it finely.
  11. 11. Mix the minced meat with the finely chopped cabbage, pepper, onion, garlic, parsley, breadcrumbs, egg, and mustard.
  12. 12. Knead the mixture vigorously until well combined.
  13. 13. Season the filling with salt and pepper.
  14. 14. Distribute the minced meat mixture evenly over the prepared cabbage leaves.
  15. 15. Fold the sides of the cabbage leaves towards the center.
  16. 16. Roll the leaves up tightly.
  17. 17. Tie the rolls securely with kitchen twine.
  18. 18. Peel the carrot and celery.
  19. 19. Dice the carrot and celery.
  20. 20. Heat ghee in a large casserole dish.
  21. 21. Sear the rolls on all sides over high heat.
  22. 22. Add the diced carrot and celery to the casserole.
  23. 23. Deglaze everything with the broth.
  24. 24. Simmer the rolls in the covered pot for approx. 45 minutes.
  25. 25. Turn the rolls occasionally and baste them with the pan juices.
  26. 26. Remove the finished rolls from the pot.
  27. 27. Puree the sauce in the pot.
  28. 28. Thicken the sauce with a little starch if desired.
  29. 29. Season the sauce with salt and pepper to taste.
  30. 30. Remove the kitchen twine from the rolls.
  31. 31. Serve the rolls with the sauce.
