🍽️ Cabbage Rolls with Meat Filling

Ingredients
- 18 leaves white cabbage
- salt
- 1 red bell pepper
- 1 onion
- 1 clove garlic
- 1 bunch parsley
- 400 g beef mince
- 4 tbsp whole wheat breadcrumbs
- 1 egg
- 2 tbsp medium-hot mustard
- pepper
- 1 carrot
- 100 g celeriac
- 2 tbsp ghee
- 250 ml vegetable broth
Instructions
- 1. Trim the thick center ribs from 12 white cabbage leaves flat.
- 2. Blanch the cabbage leaves in boiling salted water for about 2 minutes to soften them.
- 3. Remove the leaves from the water and shock them immediately in cold water.
- 4. Remove the hard core from the remaining cabbage leaves.
- 5. Finely chop the remaining cabbage.
- 6. Wash the pepper, halve it, and remove the seeds and white membrane.
- 7. Dice the pepper into very small cubes.
- 8. Peel the onion and garlic.
- 9. Dice the onion and garlic very finely as well.
- 10. Wash the parsley and chop it finely.
- 11. Mix the minced meat with the finely chopped cabbage, pepper, onion, garlic, parsley, breadcrumbs, egg, and mustard.
- 12. Knead the mixture vigorously until well combined.
- 13. Season the filling with salt and pepper.
- 14. Distribute the minced meat mixture evenly over the prepared cabbage leaves.
- 15. Fold the sides of the cabbage leaves towards the center.
- 16. Roll the leaves up tightly.
- 17. Tie the rolls securely with kitchen twine.
- 18. Peel the carrot and celery.
- 19. Dice the carrot and celery.
- 20. Heat ghee in a large casserole dish.
- 21. Sear the rolls on all sides over high heat.
- 22. Add the diced carrot and celery to the casserole.
- 23. Deglaze everything with the broth.
- 24. Simmer the rolls in the covered pot for approx. 45 minutes.
- 25. Turn the rolls occasionally and baste them with the pan juices.
- 26. Remove the finished rolls from the pot.
- 27. Puree the sauce in the pot.
- 28. Thicken the sauce with a little starch if desired.
- 29. Season the sauce with salt and pepper to taste.
- 30. Remove the kitchen twine from the rolls.
- 31. Serve the rolls with the sauce.
