  1. 1. Bring plenty of water with plenty of salt to a boil.
  2. 2. Loosen the sauerkraut with a fork.
  3. 3. Let the sauerkraut drain in a sieve.
  4. 4. Cook the pasta al dente in the boiling salted water, as indicated on the package.
  5. 5. Peel the onions in the meantime.
  6. 6. Halve the onions.
  7. 7. Cut the onion halves into thin strips.
  8. 8. Heat 1 tablespoon of oil in a pot.
  9. 9. Add the onion strips, bay leaves, and cumin to the pot.
  10. 10. Sauté the mixture covered on low heat for 5 minutes.
  11. 11. Cut the sauerkraut into smaller pieces as desired.
  12. 12. Fold the sauerkraut into the onion mixture.
  13. 13. Sauté the sauerkraut briefly.
  14. 14. Pour in the broth.
  15. 15. Simmer everything covered on low heat for another 15 minutes.
  16. 16. Drain the pasta.
  17. 17. Let the pasta drain well.
  18. 18. Heat the remaining oil in a large non-stick pan.
  19. 19. Fry the pasta in it until golden yellow on medium heat.
  20. 20. Stir the pasta frequently while doing so.
  21. 21. Season the pasta with a little salt.
  22. 22. Add the drained sauerkraut.
  23. 23. Fold the sauerkraut into the pasta.
  24. 24. Heat the mixture.
  25. 25. Remove the bay leaves.
  26. 26. Wash the chives.
  27. 27. Shake the chives dry.
  28. 28. Cut the chives into small rings.
  29. 29. Fold the chive rings into the sauerkraut noodles.
  30. 30. Season the dish with salt and pepper.
  31. 31. Serve the sauerkraut noodles immediately.
