🍽️ Sauerkraut Noodles – Smarter

Ingredients
- Salt
- 500 g fresh sauerkraut
- 350 g whole wheat noodles (e.g. penne)
- 150 g onions (3 onions)
- 3 tbsp rapeseed oil
- 2 bay leaves
- 1 tsp caraway
- 100 ml classic vegetable broth
- 1 bunch chives
- pepper
Instructions
- 1. Bring plenty of water with plenty of salt to a boil.
- 2. Loosen the sauerkraut with a fork.
- 3. Let the sauerkraut drain in a sieve.
- 4. Cook the pasta al dente in the boiling salted water, as indicated on the package.
- 5. Peel the onions in the meantime.
- 6. Halve the onions.
- 7. Cut the onion halves into thin strips.
- 8. Heat 1 tablespoon of oil in a pot.
- 9. Add the onion strips, bay leaves, and cumin to the pot.
- 10. Sauté the mixture covered on low heat for 5 minutes.
- 11. Cut the sauerkraut into smaller pieces as desired.
- 12. Fold the sauerkraut into the onion mixture.
- 13. Sauté the sauerkraut briefly.
- 14. Pour in the broth.
- 15. Simmer everything covered on low heat for another 15 minutes.
- 16. Drain the pasta.
- 17. Let the pasta drain well.
- 18. Heat the remaining oil in a large non-stick pan.
- 19. Fry the pasta in it until golden yellow on medium heat.
- 20. Stir the pasta frequently while doing so.
- 21. Season the pasta with a little salt.
- 22. Add the drained sauerkraut.
- 23. Fold the sauerkraut into the pasta.
- 24. Heat the mixture.
- 25. Remove the bay leaves.
- 26. Wash the chives.
- 27. Shake the chives dry.
- 28. Cut the chives into small rings.
- 29. Fold the chive rings into the sauerkraut noodles.
- 30. Season the dish with salt and pepper.
- 31. Serve the sauerkraut noodles immediately.
