🍽️ Homemade Cabbage Noodles

Ingredients
- 300 g flour (and some flour for working)
- 3 eggs
- 1 tsp olive oil
- salt
- 800 g white cabbage
- 4 onions
- 2 tbsp butter
- 3 tsp sugar
- salt
- pepper
- 125 ml meat broth
- 2 tbsp vegetable oil
Instructions
- 1. Put flour, eggs, oil, and half a teaspoon of salt into a bowl.
- 2. Knead the ingredients into a smooth and elastic dough.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball in plastic wrap.
- 5. Let the dough rest at room temperature for about 30 minutes.
- 6. Lightly dust a work surface with flour.
- 7. Roll out the dough thinly on the floured surface.
- 8. Cut the dough into strips about 2 by 8 centimeters.
- 9. Place the noodles on the floured surface.
- 10. Let the noodles rest until further processing.
- 11. Remove the core from the white cabbage.
- 12. Wash the white cabbage.
- 13. Cut the white cabbage into thin strips.
- 14. Peel the onions.
- 15. Finely chop two of the onions.
- 16. Slice the remaining onions into thin strips.
- 17. Heat the butter in a large pot.
- 18. Sweat the chopped onions.
- 19. Sprinkle the onions with sugar.
- 20. Let the onions caramelize slightly.
- 21. Add the white cabbage.
- 22. Sauté the white cabbage briefly.
- 23. Season the vegetables with salt and pepper.
- 24. Pour the broth into the pot.
- 25. Cover the pot.
- 26. Simmer the vegetables for about 15 minutes.
- 27. Cook the noodles in boiling salted water for about 5 minutes until al dente.
- 28. Drain the noodles.
- 29. Let the noodles drain well.
- 30. Heat oil in a pan.
- 31. Fry the onion strips until brown while stirring.
- 32. Add the noodles briefly to the pan.
- 33. Mix the noodles into the stewed cabbage.
- 34. Season the dish with salt and pepper.
- 35. Serve the cabbage noodles.
