  1. 1. Rinse the fresh herbs under running water.
  2. 2. Remove any wilted or inedible leaves.
  3. 3. Gently pat the herbs dry with a kitchen towel.
  4. 4. Pluck the leaves off the stems.
  5. 5. Roughly chop the herbs with a knife.
  6. 6. Place the chopped herbs into a clean, prepared jar.
  7. 7. Add the chili peppers to the jar.
  8. 8. Add the peeled garlic cloves.
  9. 9. Pour the oil over the ingredients in the jar.
  10. 10. Seal the jar tightly.
  11. 11. Let the oil infuse for about one week in a cool, dark place.
  12. 12. Strain the finished oil through a fine sieve.
  13. 13. Transfer the oil into a clean bottle or jar.
  14. 14. Use the oil within about four weeks.
