🍽️ Cozy Sauerkraut Potato Casserole

Ingredients
- 750 g mostly waxy potatoes
- salt
- 200 ml milk
- pepper
- grated nutmeg
- 2 bell peppers (red and green)
- 1 onion
- 3 tbsp oil
- 500 g sauerkraut
- 1 tsp caraway seeds
- 2 eggs
- 3 tbsp breadcrumbs
Instructions
- 1. Peel the potatoes.
- 2. Cut the potatoes in half.
- 3. Boil the potato halves in salted water for 25 to 30 minutes.
- 4. Bring 100 milliliters of milk to a boil in a pot.
- 5. Drain the cooking water from the potatoes.
- 6. Mash the potatoes until fine.
- 7. Stir the hot milk into the potatoes.
- 8. Keep stirring until a smooth mass forms.
- 9. Season the mashed potatoes with salt.
- 10. Season the mashed potatoes with pepper.
- 11. Add a pinch of nutmeg.
- 12. Quarter the bell peppers.
- 13. Remove the core from the bell peppers.
- 14. Rinse the bell peppers under running water.
- 15. Cut the bell peppers into small cubes.
- 16. Peel the onion.
- 17. Chop the onion finely.
- 18. Heat oil in a pan.
- 19. Sauté the onions in the pan.
- 20. Add the pepper cubes.
- 21. Sauté the vegetables for 2 to 3 minutes.
- 22. Tear the sauerkraut apart with your hands.
- 23. Add the sauerkraut to the pan.
- 24. Pour a splash of water into the pan.
- 25. Let everything simmer briefly.
- 26. Wait until the liquid has evaporated.
- 27. Season the sauerkraut with salt.
- 28. Season the sauerkraut with pepper.
- 29. Season the sauerkraut with cumin.
- 30. Whisk the eggs in a bowl.
- 31. Add the remaining milk to the eggs.
- 32. Whisk the egg and milk mixture well.
- 33. Season the egg milk with salt.
- 34. Season the egg milk with pepper.
- 35. Brush a baking dish with oil.
- 36. Spread the mashed potatoes on the bottom of the dish.
- 37. Add the sauerkraut on top of the mashed potatoes.
- 38. Pour the egg milk over the sauerkraut.
- 39. Sprinkle breadcrumbs over the casserole.
- 40. Preheat the oven to 200 degrees Celsius.
- 41. Place the casserole on the middle rack.
- 42. Bake the casserole for 25 to 30 minutes.
