🍽️ Crispy Pumpkin Fritters

Ingredients
- 200 g flour
- 1 tsp baking powder
- salt
- pepper (from the mill)
- 1 tsp dried thyme
- 250 ml light beer (or instead: milk, white wine)
- 2 eggs
- 800 g pumpkin flesh (e.g. Hokkaido)
- 3 tbsp flour (for turning)
- vegetable oil (for frying)
Instructions
- 1. Put the flour into a large bowl.
- 2. Mix the flour with the baking powder, salt, pepper, and thyme.
- 3. Pour in the beer and stir until you have a smooth batter.
- 4. Beat the eggs into the batter.
- 5. The batter should be thick and flow slowly off the whisk.
- 6. Cut the pumpkin into bite-sized cubes.
- 7. Toss the pumpkin pieces in some flour.
- 8. Dip the floured pumpkin pieces completely into the batter.
- 9. Heat oil in a pan to about 170 degrees Celsius.
- 10. Fry the dipped pumpkin pieces in batches until golden brown.
- 11. Frying takes about two to three minutes per batch.
- 12. Let the finished fritters drain on kitchen paper.
- 13. Keep the fritters warm in the oven at 80 degrees Celsius if needed.
- 14. Serve the fritters with lemon crème fraîche as desired.
