  2. 2. Mix the flour with the baking powder, salt, pepper, and thyme.
  3. 3. Pour in the beer and stir until you have a smooth batter.
  4. 4. Beat the eggs into the batter.
  5. 5. The batter should be thick and flow slowly off the whisk.
  6. 6. Cut the pumpkin into bite-sized cubes.
  7. 7. Toss the pumpkin pieces in some flour.
  8. 8. Dip the floured pumpkin pieces completely into the batter.
  9. 9. Heat oil in a pan to about 170 degrees Celsius.
  10. 10. Fry the dipped pumpkin pieces in batches until golden brown.
  11. 11. Frying takes about two to three minutes per batch.
  12. 12. Let the finished fritters drain on kitchen paper.
  13. 13. Keep the fritters warm in the oven at 80 degrees Celsius if needed.
  14. 14. Serve the fritters with lemon crème fraîche as desired.
